OK, I'm pretty desperate. Once again this evening I served lukewarm, squeaky, tasteless green beans with dinner. I really need some ideas for how to cook them.
I have one recipe that we love - stir frying in a bit of oil and water with lots of garlic - but that takes too much time and is too messy to do it regularly, in my opinion. With a view to ease and speed, I have tended to throw frozen green beans in a covered pyrex dish with a bit of water at the bottom and microwaving long enough to steam heat them through. But, as I mentioned, then they taste unbelievably bland. I buy the large bags of frozen ones at Costco, so any advice would have to work with frozen green beans.
Help? Please?

This is really a summertime recipe, but I personally enjoy it year-round...
This is how my Italian grandmother always serves them: steam your green beans as usual, then cool under cold running water. Place beans in a covered dish and add some olive oil, red wine vinegar (amount depends on how tangy you like it), and minced garlic. Put the lid on and shake to coat. Serve chilled or at room temperature. It's best for the dish to sit a bit before eating so the beans take on the vinegary flavor. And leftovers are great over a green salad.

If fresh I cook them in a frying pan with a little water until tender then drain the water and top with butter and parm cheese. If frozen I cook them in the microwave and then top the same way. (My kids never ate them until I started making them this way.)
I've made them as appetizers too that were really yummy. Take fresh green beans, wrap with a piece of bacon and top with a little brown sugar and stick under the broiler until the bacon is crispy. yummy!

Yes, G.Beans drenched in Ranch are tasty, especially mixed with some wild rice.
We've been roasting our veggies lately.
Cut up the beans into bite sized pieces and lay on cookie sheet.
Sprinkle with olive oil and toss. Sprinkle with salt, pepper, garlic powder, and/or fresh or dried onions or any combo of the above.
Roast at 375deg., tossing now and then until piping hot and browning...about 20 min.?? (I really can't remember..just watch them )

This is similar to a couple of the recipes above, and it makes a nice colorful dish (though perhaps it's not a great every day one).
Heat oven to 425.
Boil water in a large pot. Add 1 1/2 lbs green beans. Cook for 4 minutes, then drain well. Place in a roasting pan and toss with red and yellow pepper strips from two small sweet peppers, 2 T. butter (cut into pieces), 1/4 t. salt and 1/4 t. black pepper.
Roast in oven until vegetables begin to brown, about 15 minutes. Shake pan occasionally to redistribute.

The only way my kids eat green beans is with ketchup. I usually used canned, but for frozen, you could just add water to a dish of frozen beans. Add a generous amount of ketchup to the bowl, cover with cling wrap and microwave 3-4 minutes. Voila! Stir and serve with slotted spoon.
Not gourment, but fast and tasty.

When I make frozen green beans in the microwave, I don't put any water at the bottom of my corning ware dish, and I will add butter, salt, pepper, garlic, and onion powder mid-way and at the end of cooking time. I like them just a little crunchy too.

sleeping toddler on one shoulder, excuse typing.
Green Bean Casserole:
Steam beans as you like or used canned beans
toss with live oil to coat
sprinkle generous amount of garlic powder, onion powder, salt, and pepper.
add bread crumbs and mix...amount will depend on beans...you're looking for crumbly texture.
place in baking dish and cover with parmesan cheese.
Warm in oven until golden brown.

we eat them lightly steamed with Mozzerrela cubes and roma tomatoes. Toss in Italian dressing and some fresh basil. My kids love this!

Well, we don't steam them.
I will admit to using canned. Mostly because my freezer space is taken up with pigs and chickens...lol. And a beaver pelt. LOL
And I must admit to doing the following:
Taking some bacon grease, I heat it up in the bottom of the saucepan I am going to use to cook the beans in...toss in about 1/2 an onion, finely chopped. Saute the onion, and when they have just reached that lovely clear-yellow-brown color, I put in the two cans of green beans, a couple of medium sized potatoes cut into 6ths or 8ths, crack in some pepper, put in a little sea or kosher salt, stir well, and let it cook at a low boil until the potatoes are soft.
Nummmmy. DH loves them even better when I cook some bacon and onion together before I do the beans/potatoes thing...but I have a hard time getting the bacon cut small enough when it is raw...so I just skip it most of the time...

Steamed green beans. Then sprinkle with garlic salt to taste. Add red pepper flakes to taste.
