Chicken and leftover mashed potatoes will be served here tonight. There was some mighty tasty sounding chicken dinners posted on Monday night. DeAnn posted about lemon rosemary chicken, for some reason that just makes my mouth water.

Yes, I'm glad, too. I had this defrosted and hoping that everyone can enjoy it. It was originally planned for St. Joseph's Day, but the other plan for spaghetti is definitely shelved until next week.

I've promised a child that we'd do some lemon pepper chicken..

I actually use lemon pepper, rosemary and garlic on it as a dry rub and then grill it.

Maybe we'll have mac and cheese with it..

Now that we are over the flu (did you wonder how I had time to post so often--sitting at the computer was my most strenuous activity this week aside from ), we are actually eating dinner tonight. My DIL sent this sauce for chicken:
1/3 c. butter + 1/3 c. honey + 2 T. prepared mustard + 1/4 tsp. salt, combine and melt together. Pour over chicken (recipe calls for boneless, skinless breasts) and bake 1 hour at 350.
So that's it plus stir-fried bok choy with garlic and ginger and maybe noodles. I'm actually hungry!
