Potato pancakes. We're doing meatless on Wednesdays too. That Cranberry Chicken sounds yummy!

Our homeschool group is sponsoring our parish's Lenten Soup Supper, so I'm making Chicken Vegetable Soup (safe for my son) to share. I'll be making a bit extra to serve for tomorrow, too.

Stuffed bell peppers which my dh so kindly picked up after the Lafayette basketball game on Monday night.
If you are ever passing through Scott, LA this is the Best Stop to make.
It'll definitely give you a taste of Cajun-flavored culture and they're located on I-10 between my house and Colleen's and Alice Cantrell's. So it's definitely a good stop!

Chicken Lentil Chili and homemade bread.
Dad and boys went snowboarding today so I need to greet them with something warm and toasty! Also have some broth on for chicken noodle soup for tomorrow night...runny noses in the house need a little nourishing broth.

PIZZA!!! yay!! paper plates!!! yay!!
But I have to tell you about the enchiladas I made last night. Traditionally, you cook the corn tortillas and roll with the filling and cover with sauce and bake..
I've tried just heating the tortillas to roll and then covering with sauce and baking.. they're ok but the texture isn't great because the tortillas absorb the sauce.
Well I was browsing through my low-fat mexican cookbook and realized that they do it differently... you heat the tortillas to be able to roll with the filling.. but then you bake them without the sauce.. you add the sauce just before serving. They came out GOOD.. and since my filling was turkey, they were probably actually low fat.. and you didn't miss it!!

Tastefully delicious but spicy too. Too hot for the girls...
