I have a schedule crunch today and I also have lots of potatoes to use up. Can I peel them and immerse them in cold water, then let them sit for, say, 1 1/2 hours? Or is that too long?

I've done that before. I don't think 1.5 hours is too long. I'm sure I've done it even longer than that and never had any problems.

oh sure.. I've put a bowl of peeled potatoes in water into the fridge and still used them a couple days later

I did this yesterday for my potato soup -- peeled the potatoes and put them in cold water in the AM, cooked them in the PM. They were just fine!

Yep. Went 24 hours this week. Intended on cooking them on Sunday then a minor crisis postponed them until Monday. They were awesome and smelled fine and everything!
