Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Tonight I plan on making the pecan crusted chicken that Patty shared a bit back. I also picked up some of the sweet potato fries at Trader Joe's so we'll give them a try and make a salad.

Then I get to go for dessert at the local Starbucks with some of the neighborhood homeshcooling moms.

Lunch will be Chicken salad sandwiches and pretzels

Dinner will be Crock Pot BBQ beef sandwiches and sweet potato fries (very popular!) This will be my first try at homemade ones though!

I don't have to cook tonight or tomorrow.

Tonight my son has a game in Lafayette. Tomorrow the KC's have their open family night w/ covered dish.

I did cook last night    : country-style pork ribs w/ rice & gravy, new peas and corn.

We're doing a quick stir fry with tofu, broccoli and onions over rice and fruit on the side. Clingy, sick 10 month olds make for a difficult dinner hour.

I've got the chicken in the stockpot for soup. I made fresh bread yesterday so I will make chicken salad sandwiches to go with it. I'll just make sure I add extra veges to the soup. I think this is one of the only ways my husband likes to eat chicken. He doesn't consider it real meat.

I was going to do fried rice, but I think we'll have eggs poached on vegetables instead. We need more veg in our diets- lots of meat and starch recently.

Cereal and peaches for breakfast, leftover pasta with bacon, mushrooms, and cream for lunch.

Nancy,
I'd love the recipe for Chinese 5 spice chicken in the crockpot!
