Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Oh...I love sundried tomatoes...make warm pasta with chicken chunks, the tomatoes, and other fav veggies dressed with olive oil...put them in salad in place of reg. tomatoes, add them to grilled sandwiches (great to dress up grilled cheese) to make them more gourmet panini style, chop them in the food processor and a fresh twist to things you usually put relish in--tuna salad, stuffed eggs, etc...make pizza without the red sauce, justbrush crust with olive oil and top with cheeses and sundried tomatoes (and other toppings if you like...I like artichoke hearts). Enjoy them!

Hi Ruth,

I've bought the big jar of sundried tomatoes at BJ's before. They don't last too long here because.. about once a month we make Sundried Tomato Broccoli Fusilli. It is from The California Pizza Kitchen Cookbook. It is very garlicky and quite yummy. These days we replace some of the olive oil in the recipe with a bit of the seasoned oil from the jar of sundried tomatoes and we use a bit more fresh thyme than the recipe calls for. We also double the recipe if we want leftovers for our family size.

Whenever I make it to Trader Joes (it's really far away), I buy the marinated fresh mozzarella logs to melt it over sundried tomatoes on crostini or ciabatta loaf and then top them with fresh basil.

Sometimes if I have an abundance of an ingredient that I do not use often, I will plug it into the Search Box on the Food Network website (and then click search by rating). I've made this recipe before. Oh, another recipe I make is Rachael Ray's Tuna Pan Bagnat, but I replace the onions (too sharp) with Sundried Tomatoes (sweet and chewy).

Can you tell I like Sundried tomatoes? A lot.

Blessings,
