I am looking for serious inspiration today ladies! I had Meatloaf, garlic mashed potatoes, creamed cauliflower, and salad on my menu, but between dh not going to the market yet this week and trying to stay off my feet - I just don't know if that will be a go!

We are heading out on a field trip today. I have French Dip in the crockpot. When we get home, I'll just pull out the big bag of tater tots from the freezer and cook those up and make a salad.

We still have leftover shredded beef from yesterday, so it looks like it will be sandwiches and potato salad again here. Since I went grocery shopping yesterday, I'll be adding a green salad and baby carrots to that.

White bean, leek, potato, and carrot soup; Pesto asiago bread (super yummy, not homemade!); Salad of green leaf lettuce and raddichio; Linzertorte with whipped cream (this IS homemade). This is an elaborate, fancy meal for a Wednesday night, but I had to use the extra dough for the torte (leftover from Christmas), and I just happen to be going to a store that sells the family's favorite bread.

ETA: Lisa - if you have the stuff available, I'd go with grilled cheese sandwiches and tomato soup. Nice and cozy on a snowy day and simple for a resting Mom.

Lisa - I suggest whatever the older kids can make
I have an impossible evening to plan for. My dh and oldest daughter will be helping with a blood drive at our Church.. and getting home in time for my and oldest boy to go to a scout event (they're doing the swimming activity and I'm going because that's more my area of expertise.. usually though it's dh doing the scout thing with him)
So.. today might be a good day for a pot of beans..

Thanks for the suggestions ladies, but my dinner dilemma has been generously solved!! MarieC and her darling little boy just dropped off a pot of chili with sour cream and cheese, corn bread, and ice cream for dessert!! YUM!! I am a very blessed mama!

We've been gone all day on a field trip, too - wish I'd put something in the crock pot ahead of time . Now I have to cook and I'm exhausted.
We're having chicken dijon, rice, and whatever veggies I can scrounge up - probably carrot sticks and red peppers.

This sounds really yummy...in spite of the fact that I don't have a clue what French Dip is.

My mom's cooking tonight.
French dip -- yum!!! That's a roast beef sandwich (usually on French bread) served with au jus on the side, Jennifer, for dipping. Or at least that's how I remember it.

We had bbq steak and potatoes with caesar salad. My poor dh was on the deck in the snow bbq'ing. But it was yummy!!!

(If you increase the serving size on the allrecipes site, be very careful with the amount of heavy cream)
It was Delish!

This is how I make French Dip.
I use rump roast that I buy at Costco, they sell it as two rump roasts in a pack. I throw one in the crockpot and cover it with two cans of french onion soup, usually Progresso, but sometimes I have to settle for Campbells, a can of beef broth, some Worcestershire sauce. The original recipe called for beer but we don't always have beer in the house and if we do, I don't really want to dump dh's Heinkein in there. It cooks on high for a few hours and then I turn it to low for the rest of the day. The recipe called for it to cook eight hours. I'm not sure it needs to cook so long with the newer crockpots.
