I am bringing a meal to a friend that is undergoing radiation treatment...and I'm looking for ideas. I don't know them really well, so I need something that will serve a family of 7, including a couple of teenagers, and is pretty kid friendly since I don't know their likes and dislikes really. There's no food intolerances or anything like that. I'll be delivering it fresh, but I'd like something that can be frozen in case they'd rather do that.

Ok, any ideas?    I did this last month when she was receiving chemo and took some chili verde and apple cake.

Tater-tot casserole! Yummy! An adult and child pleaser

Basic ingredients:

ground beef, green beans, cream of mushroom soup and tater-tots

Brown the groud beef, stir in the cream of mushroom soup and the green bean, pour into a baking pan and cover the whole thing with tater-tots.

It is basically like a "shepherd's pie" with out the mashed potatoes.

I made this cranberry chicken for a family recently, they loved it! I served it with stuffing. Chicken dipped in butter then drenched in Ritz crackers and baked is also a family favorite these days. I like to serve it with homemade applesauce.

This really is a nice thing to do for this family! It is so nice they can spend time together instead of cooking.

Use cream of "any other" soup - chicken, celery, broccoli, etc. My DH is deathly allergic to mushrooms, and Tater Tot Casserole is an absolute of favorite of most everyone here - so I have made it with many of the other cream soups and it works just fine. (I have to use a different soup for green bean casserole, too...and poor dd19 LOVES shroomies).

Unfortunately, that won't work here, Laura. It's the CREAM my hubby's allergic to -- mushrooms are A-OK with him and I use it a lot because he loves them.

I've tried a homemade mushroom soup once made with fresh mushrooms, chicken stock, potato puree and almond milk -- that he liked, but the kids didn't... maybe I'll mix up a batch using that just for him.

I fall into that same trap! The family will be so grateful for any meal that you make.

I did want to edit my recipe for cracker chicken, that I think originally came from Dawn at By Sun and Candlelight. You dip it in sour cream, then roll in cracker crumbs, the butter part comes in when you pour a bunch of melted butter over it then pop it in the oven.
