Anyone care to share their marshmallow making experience. I was hoping to make some today for the first time and realized I don't have gelatin. I found some recipes without it but it didn't seem to be the norm. Has anyone made them without gelatin????

Two years ago, we made marshmallows from a recipe in Martha Stewart's magazine and they were hard to do, but this recipe sounds more doable.

Re: the gelatin -- you need it to make the marshmallows stay to shape; I think otherwise you'd end up with marshmallow fluff (which may not be a bad thing if you want to mix it into hot cocoa or something?)

We received home made marshmallows last year at Christmas. They were YUMMY!! I may have to try this.

Thanks for posting the recipe! My kids can't have food dyes, and I couldn't find any store marshmallows that didn't have blue in them, so I've been kicking around the idea of making them.

Now that I know someone ELSE has done it, I might have the courage to try!

One word of caution about the recipe. It says to whip for 12 minutes, it only took about 2-3 minutes to get to that stage, I was skeptical that it had whipped up so quickly so I continued to whip another couple of minutes. Had I whipped much longer it would have been too set to spread in the pan. I also did not use parchment paper, just greased and sugared the sides and bottom of the dish.

We toasted them last night!

P.S. Milehimama, I made them for the same reason, I couldn't believe the stuff in marshmallows my dd couldn't have.
