I get so bored with food! We mostly eat leftovers or noodles for lunch, very occasionally sandwiches. We have people, and usually a friar, for lunch about once or twice a week and often eat lunch out on Fridays, homeschool excursion day.

But the rest of the time, ideas for cheap, easy, healthy,yummy, not too fattening , even make-your-own lunches and avoid-fast-food takeaway escape me.

Any idea?

It's kind of funny, because we're not a *leftovers* family. I was raised on leftovers, but somehow they just kind of gross dh out on principle (go figure), so we've usually not prepared extra. But just today, dd 12 asked if I could please start cooking larger amounts for dinner so that there would leftovers to reheat for lunch.

Usually we do boxed mac and cheese (now, for *me* that's the gross-out ), PB&J, all the usual boring things. So, it sounds like leftovers could become the new and exciting lunch menu item here.

I'm no great expert, but...

Baked potatoes, homemade soup, dips (hummus, guacamole, taramasalata) with crudites, omelettes, pitta breads...

Those are rare and welcome alternatives to the good old cheese sandwich here.

we eat hot dogs (healthy kinds), bean buritos, grilled cheese sandwiches, egg and cheese tortillas, egg salad sandwiches, hamburger bun pizzas, good ole pb & j and ham sandwiches.

apple slices and cream cheese and or peanutbutter as indivudally preferred.

bologna sandwiches too if they wanted it.

Dinner was swiss steak, california blend veggies with cheese sauce, and 2 cans of asperagus which we will never try to eat again no matter how cheap the sale price. Although it was nice to have the kids united in sentiment on something.

Leonie, mountain bread, (flat, healthy rollup bread) and I put all sorts of delicious salads with some leftover chicken usually, and I use a nice soft cheese as a spread and those lovely nutty speads in the deli or cold area of the supermarket, the brand name escapes me but it is usually cashew and something - YUM! I throw in advocado, tomato, letttuce, parsley and DILL, fresh DILL, the mix with that dill is SO FLAVOURSOME! I'm sure you would enjoy it!

We do alot of stuff on tortillas - eggs and cheese, sometimes we add a meat like sausage or ground beef. Deli sliced meats with cream cheese and greens, quesadillas.

Pasta with various toppings - marinara with olives and cheese, bacon and whipped cottage cheese, olive oil, peppers and onions. Today it will be Elbows with cheddar and sliced smoked sausage links.

Homemade pizzas if I remember to start the crust early enough.

I've been making MarieC's wonderful crustless quiche once a week for lunch too.

today we had 5-cheese spinich and articoke dip with crackers or tortilla chips, black beans and rice left overs, kolbe jack cheese slices and crackers, applesauce, and 1 fresh chocoloate chip cookie each.

dinner is sweet and sour meatballs over rice
