We went peach picking last weekend - and I have hundreds of peaches - I have made cobbler and crip and parfaits and smoothies - how do I store them now. I would like to freeze them - do I just peel, cut and freeze? Any other ideas?

peach jam? canned peaches? I believe with fruit you only have to be able to waterbath can them.. so you don't need to have a pressure canner.
And I think you can just peel and slice and freeze.. hmmm might need something to keep them from getting dark though..

I make a sryup for my peaches too and I always throw in a Vitamin C tablet to help them maintain their beautiful color.
I make my own baby food, maybe you can make some puree and freeze it in ice cube trays for later?

I only peel and cut the peaches, add a little vitamin C (Fruit Fresh), and then freeze. I don't add any syrup or anything. They turn out just fine for me that way.

Thanks everyone. Jodie - that link is awesome. Now I just have to get some Fruit Fresh so I can start freezing - any ideas whereabouts in a grocery store it would be?
I make my own baby food too - my little guy is actually into ripe peaches in little pieces - but I may puree and freeze.
Any ideas about peach sauce?

fruit fresh is generally found next to the canning supplies (pectin, lids, maybe jars) in the baking aisle.

My mom always put sprinkled sugar and cinnamon onto the cut peaches and then freezed them. That's it. They made the best ice cream topping and peach pies. Of course the peaches we have down here are different than in other parts of the country with more of a dark pink, reddish flesh.

I had a bushel of peaches earlier this summer, and made peach butter, peach-strawberry jam, and strawberry-peach jam (as well as a peach cobbler one night, lol).

I like to make peach pie filling...you have to do a water bath for them but its a good way to put up some peaches(and apples and blueberries )

I'd make peach ice cream first. Then I'd freeze the rest sliced up and sprinkled with lemon juice and sugar, so that it's ready for pies, crisps, compotes or just for snacking.

try grilling them! We did it for the first time this year and it was delicious. But them in half. Melt some butter and mix in some cinnamon. Brush it over the top and BBQ them. (You can even put a couple white chocolate chips in the middle)
Delicious!

Oh...you could send some to me Okay, really, I love the peach sauce that Cracker Barrel puts on pancakes. You could try to can something like that.

I looked everywhere for Fruit Fresh - could not find - maybe this area is just too full of "city slickers"!! So I am going to use lemon juice and sugar
