We are hiking the local trials and I'd like to take along something a bit more healthy than the prepackaged varieties from the store.

our favorite is Elizabeth's recipe!! soooooo good. except i don't make it as often since maple syrup went up 2.5x in price. i've used agave nectar as substitute and it's quite good too.

I make a very simple granola (the kids are sort of anti nuts and seeds here...at least the littles)

I take a cup of oil, a cup of honey, then add a handful of whole wheat flour, and lots of oats and coconut until it is the right consistency. I think the ratio (out of the More With Less cookbook) is 1 cup wet to about 6-8 dry!).

It's different every time, but we love it as a break from oatmeal in the summer! I make a large batch that can last the week in our 6 person home.

Oh, and we add raisins as we eat it (funny eh how with four kids some like some things, others don't- a wee bit frustrating at times!)
