Does anyone have a yummy first birthday cake recipe they could share? Dd will turn 1 year old next Friday, August 8th (the Feast of St. Dominic), and I am looking for either a vanilla, chocolate or marble (or any other type of cake you have found works well!) for her birthday party.

This is our favorite chocolate cake

HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake
Ingredients:
2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING(recipe follows)
Directions:
1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.

2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.

3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings.

VARIATIONS:
ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.

THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.

BUNDT CAKE: Grease and flour 12-cup Bundt pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.

CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.


"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING

1 stick (1/2 cup) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract

Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.



Usually we do just a buttercream frosting:

1/2 c shortening
1/2 c butter
hint - all butter or all shortening works
1 t vanilla
1 lb. powdered sugar
2 T milk

cream butter and shortening; add vanilla, gradually add sugar 1 c at a time beating well on medium speed. When all sugar is mixed in add milk and beat at medium speed until light and fluffy.


And this is a good white cake recipe

Here's the one I use for our birthday cakes, cause it holds up well to my weird decorating:

2 1/4 Cup all-purpose flour
1 Tbl baking powder
1/2 Tsp salt
1 2/3 Cup sugar
1/2 Cup butter, softened
1 Cup milk
2 Tsp vanilla
3 egg whites

Preheat oven to 350. Grease and flour cake pan(s). Sift flour, baking powder and salt together in a large bowl. Stir in sugar. Add butter, milk and vanilla; beat with an electric mixer on low for 30 seconds. Beat at medium speed for 2 minutes. Add the egg whites and beat 2 more minutes. Pour into prepared pans and bake as listed below, until toothpick inserted in center comes out clean. Cool in the pans 10 minutes. Loosen cake edge from pan, invert on a rack and cool completely.

Baking Times:
1 13x9 inch pan: 35-40 min.
1 10-inch Bundt pan: 45-55 min.
2 9-inch pans: 35-40 min.
2 8-inch squares: 30-35 min.
3 8-inch rounds: 20-25 min.
24 cupcakes: 20-25 min.

I have made this cake a couple of times and I *love* it. It is so easy, I don't even have to pull out the sifter. I use whole wheat pastry flour and it comes out beautifully.

Since we had food allergy issues, we added foods more slowly and we weren't ready for the traditional flavored cakes. We made one for baby, then a delicious one for the adults.

Oh, what is with all the food posts today? I'm SO hungry these past few days. Chocolate cake is a MUST for first birthdays, according to my mother. Gotta get good'n'messy!

Could y'all just bring me some of whatever you're fixing? I've been nauseous and miserable up to now and I finally want to EAT!
