I am looking for some yummy home made ice cream recipes. Tonight we tried Ben and Jerry's Mint Oreo ice cream. The recipe I used called for eggs and I really would rather not use raw eggs.

What type of ice cream maker do you have? Ours is a Rival and I think it may be on it's last leg. It took forever to freeze the ice cream, I finally stopped it because it was giving me a head ache.

The cook's illustrated recipes use eggs, but you heat the mixture and make a kind of custard. It takes more time because the mixture is hot and has to cool completely before putting it in the mixer, but it does heat the eggs so those with raw egg issues don't have to worry. I use it when I am making it for others (we don't mind the raw eggs here)and it tastes really good. The eggs certainly make it richer than it would be without.

We have a cuisinart maker. We inherited it, but I like it. It seems to work well, and isn't as loud as the bucket version you put ice in, etc..., that we've used in the past.

We have a Cuisinart 2 qt ice cream maker. It is pretty new to us but we love it. So far we are only making vanilla ice cream and we mix in choc chips or fruit. The recipe is easy calling for whole milk, heavy cream, sugar and a smidge of vanilla (no eggs). It takes 25 mins in the maker and then it is soft serve consistancy. After about 2 hrs in the freezer it is hard ice cream consistancy.

The Cuisinart is what I have my eye on. We have a bucket one now. It is a mess and I probably don't use the right kind of salt.

Most of the recipes I've used in the past do not call for raw eggs. The mint oreo ice cream was yummy. I think my dd may have been heavy handed on the mint though.

I have a Krups that I've used for years. My complaint? It doesn't make enough!

I've made lots of different recipes; my favorite is a french vanilla ice cream where you basically cook the eggs with cream and milk on very gentle heat. When it looks kinda like custard sauce that's when you chill then freeze.

There are also gelato recipes that use cornstarch but I've lost mine

His recipe for bacon ice cream!!! is here -- no I haven't tried it. This is the year!!

Do you chill your mixture before you freeze it in the machine? I find that that really helps a lot. If you're already doing that I don't know what to tell you :(

I did chill the mix before I put it in the ice. Looks like Krups has a new model coming out this spring. Maybe I'll wait and bit and check that out.

I have two boys that would love bacon ice cream.

I have the Ben and Jerry's ice cream cookbook - I use egg beaters in place of regular eggs.

Also, our ice cream maker started taking forever to make ice cream. We bought a new one, used the same recipe and it was much faster, so the old one went away.

We have a Deni Ice cream maker.. It was kind of cheap, but it works good and fast, the kids love to do it, and it is very easy.

I make a version of Cold Stone Creamery's "Sweet Cream" ice cream. It is so good, (it is just half & half, cream, sugar, and vanilla -- never said it was good for you ) but I can't have dairy anymore, and so I don't get any . I have tried to use dairy substitutes...but it just isn't the same.

I think so--especially when you are wanting to use healthier ingredients. We make vanilla/maple with maple syrup as the sweetener--definitely costs less than Julie's organic at the hfs.

Not sure if it saves over buying the regular kind on sale. For this pregnancy, dh has been getting Edy's or whatever is in the local fliers for buy one get free. I don't know if you could make two cartons worth for much less than the $5-6 that costs.

For us when we didn't know about the allergies -- it was all about getting "designer ice cream" without paying the designer prices, i.e., once I made Chipotle Peach Ice Cream -- if I had ordered that at Il Laboratorio del Gelato or Ciao Bella the price would have been too prohibitive.

Now it's more of a "I can control what I put in there" because of allergies, etc. But yes, it isn't the same without the dairy. We mostly stick to sorbets and gelatos now. Once in a while, for a child's birthday party, I'll make real ice cream -- full fat, etc. My favorite is lychee. Oh, and can't forget avocado ice cream!!! Brings me back to my childhood.

Jenn, not sure. I looked on Amazon and can't find my model -- I got it at Williams Sonoma about ~10 years ago.

This is very rich but just needing a mixer and freezer. Obviously not for those with dairy allergies.


Whip
1 600ml bottle of cream
Add
1 tin of condensed milk

Add variety of flavours such as

1 Tablesppon of coffe with 1 tablespoon of water and mix through or
1 Tablespoon of vanilla
or finely chopped chocolate for choch chip or your favourite chocolate.
or passionfruit
or 2 Tablespoon of cocoa.

Place in container and freeze overnight.

We have the Cuisinart too. I don't like to admit it, but I somewhat prefer buying ready-made ice cream, as I seem to spend more than ready-made on the ingredients to make it at home.

BTW, you can sometimes find the Cuisinart with an extra bowl. Ours didn't, but the one we bought for my father-in-law included it as a bonus.

Krups maker here. We use ours more for making frozen fruit sorbets or popsicles. I send the mixture through the machine until it is fluffy and then put it in the popsicle molds and freeze. We make our own yogurt so frozen yogurt is a snap too.
