My husband keeps suggesting that we do not always have to eat meat or fish with our dinner. I do have a few non-meat type dishes that I make on Fridays. Can anyone recommend a good, easy to use, vegetarian cookbook. I did not inherit my mom's talent for cooking.

"Vegetarian" by Parragon Press has some great recipes, it's easily and cheaply bought used on Amazon.
"Cooks' Library -- One Pot" has some nice ones along with meat recipes, too.

All the Moosewood Cookbooks are great. I especially like Moosewood Restaurant Cooks At Home Very easy, very accessible.

My favorite vegetarian cookbook is A Year in a Vegetarian Kitchen. I tried it out at my library before I bought it.

I also like Laurel's Kitchen. Wow! Some great ones in there.
And you can have my copy if you pm me. It's got so much flour and dairy, it's totally out for us now.

The favorite vegetarian cookbook here is The Redwall Cookbook by Brian Jacques. My youngest and pickiest eater saw me thawing shrimp for dinner and asked if we were having Shrimp and Hotroot soup. Please?? I never thought he would request anything with both leeks and curry powder! Vegetarian fare is much more palatable when it is presented by adorable animals. I did, however, have to tell my boys that, "Great scoff, Mom" is not an acceptable compliment at dinner  .

I just borrowed a book called Fresh Vegetarian from the Slow Cooker. It looks promising. I'm a huge fan of slow cooker cooking.

Thank you for all of the recommendations. I put a bunch of the books on hold at the library and am looking forward to receiving Laurel's Kitchen (payment for shipping should go in the mail tomorrow).

I stumbled upon this old thread while doing the recipe index -- my favorite is The Greens Cookbook by Deborah Madison, but lately I've been trying the vegetarian recipes from Melissa Clark and they are fabulous!

Vegetarian Cooking for Everyone by Deborah Madison here is our "cooking bible." We've used it so much it's totally falling apart. It's not just a cookbook, with a recipe to follow and that's it. The author gives great explanations for each dish (and many times the ingredients for each dish), so the home cook is empowered to understand how to really cook (make substitutions if needed, experiment, etc). Topics range from how to pick out a fresh turnip to fabulous pizza dough, quick and easy pasta variations, simple soups, breakfast dishes, ethnic dishes, great breads, seasonal vegetables... you name it! We are not vegetarian, but use this book extensively.

I love the books by Brother Victor-Antoine d'Avila-Tourette. I regularly use Twelve Months of Monastery Soups, especially during Lent. Some of the soups are delicious, but some are only so-so. Still, I find the book useful overall.
I also like to use regular cookbooks that feature lots of vegetable/salad/pasta recipes. How to Cook Everything by Mark Bittman is a great basic cookbook with many tasty and easy vegetable-based recipes,as well as many delicious fish options. Just don't cook his oatmeal cookies! Stick with the Quaker Oats recipe! Everything else I've made from this cookbook is delicious.

Here's my favourite: The Ultimate Vegetarian Cookbook by Roz Denny this book is not Vegan, but an excellent. My sister had a copy I enjoyed borrowing when we were first married, then I found another copy at a yard sale and was beyond thrilled! 
Another recommendation is More With Less by Doris Janzen Longacre--Longacre has gathered 500 recipes from Mennonite kitchens that tell us how to eat better and consume less of the world's limited food resources. So it teaches you how to get enough protein, without consuming a lot of meat. This is by far my most used and enjoyed cookbook!
