Has anyone changed their meal plans to Spring yet. I would love to hear your ideas. We are still on winter menus - but the sunshine today is making me want to think of Spring fare.

Watching this VERY CLOSELY for inspiration! I'm doing good to get cereal and milk on the table right now, and my family is sooooo tired of it!
I can't get a menu together to save my life.

I just finished trying out new recipes and coming up with a spring menu...what I have found helpful is to keep the weekly rotation of beans, poultry, soup, beef, seafood, meatless, meat special (something nice for Sunday dinner) in tact and just change the recipes with the seasons. That way I don't feel at a loss when it's time to come up with a new plan.
Here's what's on tap for spring:
beans: Cajun mix beans with crumbled chicken sausage and rice(our local grocer makes this sausage and I sqeeze it from the casing into the beans so it's just crumbles)/cornbread casserole/green salad
poultry: mini meatloafs (ground turkey)/baked sweet potatoes/steamed cauliflower with cheese
soup: chicken tortilla soup/cheese quesadilla wedges
beef: vietnamese pho and veggie spring rolls
seafood: stuffed baked cod with lemon butter/green salad
meatless: breadsticks with marinara/Italian salad/rotini with fresh parmesan
special: roasted turkey breast (or other item if on sale)/garlic green beans/yeast rolls
Technically our beef is also a soup, but we adore vietnamese food and I just learned how to make this at home and we love it, so no one minds.

Marilyn, I notice that you have a lot of risotto recipes listed on your blog -- can you share them?
I'm trying to work on my spring recipes here too and my postpartum brain is stuck.
So far I know that I'd like to have quiche (all my real men love it). And I'll start adding grilled burgers or chicken at least once a week soon, but... not sure what else!!

Over the weekend I took a hard look at my freezer and decided somebody needs to defrost it. Oh! That somebody is me!
So, I made a plan that we would eat our way through the freezer food during the month of April, so I can defrost the freezer completely in May.
This menu will cover dinners for the month (at least) and a good number of lunches as well. Our local grocery store had a fab special on hams two weeks ago so I ended up with two whole hams to eat...oh dear! So this is a bit pork heavy for us, but use it we must. I'll cook veggies based on what's good at the market. I can't say it screams Spring to me, but it's what we're eating.
Stuffed peppers with salad
Meatloaf (Saving Dinner freezer recipe), Peas/salad
Beef braised with coffee (from Jenn's food blog), Rice/Peas
Beef stew, bread
Italian beef and lentil soup, salad
Asian beef with snow peas, rice
Asian beef skewers, rice
Crockpot chili, bread/corn
Beef spanakopita burgers and fries with yogurt dip (from Elizabeth's food blog), fries/salad
Tacos/taco salad, salad
Chicken with pan sauce, rice/Salad
Roasted bone-in chicken beasts, rice/Veg
Salmon fillets, rice/Peas
Pork tenderloin with roasted apples and onions, vegetable
Crockpot ribs, bread/Veg
Baked ham, potatoes/Veg
Ham and penne, salad
Ham and potato soup, salad
Western eggs, toast
Ham and potato frittata, salad
Italian spaghetti with ham, salad
Skillet ham, cabbage and potatoes, salad
Rigatoni with sausage and parsley, salad
Italian pasta Florentine, salad
Rice and lentil casserole, salad
Sicilian sausage soup Salad
I've never meal-planned this far in advance so it'll be interesting to see how it turns out.

Maryan - I will look online for the recipes I adapted and post links. I am so tired tonight - I will do tomorrow. I have a great quiche recipe with a potato crust rather than pastry too.

We just had to change our menu to accommodate a newly diagnosed milk allergy, so I took the opportunity to change to a springier menu.
Monday: Oven Omelet and Toast
Tuesday: Baked Italian Chicken, Broccoli and Bread
Wednesday: Bar-B Burgers and corn
Thursday: Spaghetti, green beans and bread
Friday: Leftovers (this is date night on occasion!)
Saturday: Hamburgers, hot dogs, corn and baked beans
Sunday: Pot Roast or Roast Chicken
We will probably keep this menu around until the end of April and then change it up again for May and June.

Mine might look something like this
Greek chicken on pitas
chicken tacos
bacon cheeseburgers (for the boys)
steak salad
That's all I got so far

I was just thinking today if someone gave me extra money, I would use it to pay for premade meals...or a chef. I just hate to cook!
Steak salad sounds like a keeper!

Maryan - I use This asparagus risotto recipe as a base and tweak a little. I always put everything in at once - cannot be doing with standing there doing a cup at a time - it works out fine.
I use this zucchini risottoas a base and tweak.
I use the spinach risotto on Elizabeth's blog.
For the quiche I do - I use packs of hash brown potatoes (you could shred your own) - pressed into pans and baked - and then add a creamy eggy bacony cheesy filling.

What about places like Let's Dish - it looks tempting - but I think the cost would be prohibitive for us.
