Hello Ladies,
What are some meatless meal ideas, besides soup, to make during this season of Lent? Unfortunately, my kids don't really eat soup very well...they either don't like it or make a HUGE mess. ( All are still pretty little.)
I don't really want to go on a mad search for fancy meatless meals because it doesn't seem right during this sacrificial season...However, I am pregnant and kids are growing so we need something!!

We have meatless Fridays year-round and my kids usually end up with peanut butter and jelly, grilled cheese or fish sticks . My DH and I usually eat tuna fish sandwiches or baked salmon or tilapia with salad. Do you like fish?

We too are meatless year round. We eat pancakes every Friday.

We like grilled cheese and tomato soup.
One nice meatless meal we enjoy, which is especially fun if company is coming, is cheese fondue. We dip crusty bread chunks, apples, and pears in the melted cheese. We like the traditional Gruyeres/emmentaler combo, but there are recipes out there for cheddar and beer and other milder flavors if you have pickier kids.
We also frequently have refried beans, rice, and cheese burritos.

We eat meatless almost every night and my kids are big fans of anything Mexican-inspired. You can just substitute beans for the meat in pretty much any recipe. I think meals that are "assemble your own" are popular with children.

definately cheese pizza.. homemade is good without being the treat that buying it is..
macaroni and cheese (I love it served with broccoli.. almost like having cheese sauce for hte broccoli )
beans - just a bowl of beans topped with some cheese or as burritos or such.
grilled cheese
PB&J
eggs - fried, scrambled, boiled, etc.
stir fried rice - (use egg in it as well as veggies to get the protein)
pasta with a cream sauce and veggies, or a red sauce with no meat

We regularly eat meatless spaghetti ( mostly because I forget to thaw or buy the meat!) and if you make it with whole grain noodles, it still has a lot of nutritional value and protein. That's my plan for Wednesday as we have too many little ones to actually have a real fasting meal! My kids have also been known to eat ketchup on hot dog buns if they see no other alternative! Another thing they like (and me too) is bread and cream cheese sandwiches. Very yummy! Oh! Last week, I made a casserole with brown rice, cheddar cheese and chopped broccoli that was a total hit! I have been requested to make it again!

Lentils over rice can be simple, and is quick as far as bean recipes go. You can just saute onions and then add lentils and water, and stir in carrots and canned tomatoes or tomato sauce about 15 min before serving. Or boil the lentils first, then saute onions separately and add curry powder and cloves for a spicier dish. Or stir barley right in for a lentil-barley stew (if you vary the water amt or cook longer, it will be less stew-y and more like a casserole).
I know this is a soup, but we really love it--simple, and about 1 hr start-to-finish.

From the Saving Dinner cookbook, I recommend the Macaroni and Three cheese. It's a kidlet favorite around here, and can be eaten with fingers when a little cooler. My 23 mo and 5yo eat the leftovers straight from the fridge too. Our variation is:
1 box ziti, boiled as directed, drained and mixed with 1 c. sour cream or plain yogurt, and 1 jar meatless pasta sauce. Place half in 9x13 pan, top with ~1c "Italian 4-cheese" type shredded cheese (want it to include mozzarella, provolone and romano) Cover with remaining noodle mix and another 1c of the shredded cheese. Bake ~30-45 min (it seems forgiving) in 350 oven.

Our meatless meals include:
mac and cheese with a side of diced tomatoes
grilled cheese and tomoato soup
home made cheese pizza
baked ziti
lasagna
pasta & sauce (tomato or alfredo)
veggie stir fry (can add some tofu)
falafel
home made fish cakes
tuna melts
PB & ...(honey or banana or jam or fluff)
cheese quesadillas
bagels and cream cheese
and a variety of soups

We do jacket potatoes with salad/cheese/sour ceam/yogurt. The potatoes can be baked the traditional way or in the crockpot/clow cooker or microwave.
We also make poached eggs and chips ( or are chips a British/Aussie thing?).
Omelettes.
Pasta and tomato or pesto or peanut or lentil sauce.
Vegetarian Quiches
Vegetabe curries.

Super Easy No Boil Baked Ziti
1 jar Pasta Sauce
1-1/2 cups water
1 container (15 oz.) ricotta cheese
2 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
8 ounces uncooked ziti pasta
Preheat oven to 400°. In large bowl, combine Pasta Sauce and water. Stir in ricotta cheese, 1 cup mozzarella cheese and Parmesan cheese, then uncooked ziti.
In 13 x 9-inch baking dish, evenly spoon ziti mixture. Cover tightly with aluminum foil and bake 55 minutes.
Remove foil and sprinkle with remaining 1 cup mozzarella cheese. Bake uncovered an additional 5 minutes. Let stand 10 minutes before serving.
(That is the original recipe. I usually use a little extra water, and more noodles. Sometimes I will also add an additional little jar of pizza sauce for a different flavor. I don't use Parm chees as I can't stand the way it smells. I also use one of the Reynolds pan liners and mix it up in the pan, and clean up is a breeze. Sometimes it can be a little dry, but I usually heat up some additional sauce to pour over. I also usually add garlic, sometimes sauted onions, and occasionally spinach...I love that I don't have to cook the noodles seperately)

We're meatless on Fridays all year as well. We like simple quiche (in muffin pans- the kids seem to like the small size) or baked root veggies and beans (chopped potatoes and carrots usually, with a can or two of beans, drizzled with vinagrette salad dressing and baked).

Whole Wheat spirals with peanut butter sauce and peas is HUGE here.
The girls will also eat soba with sauteed veggies and tofu. Boil and drain the soba, then dress with a little asian vinagrette as they cool. I marinate the tofu in a sweetened soy sauce, then fry it until crispy in canola oil with a little dark sesame oil. I cook the veggies in the same pan (after taking the tofu out), then add the noodles and tofu back in. Sometimes I make the soba and the topping separately the night before and assemble chilled right before serving.
