Well, the boys really love the wild and crazy illustrations in Johnny Appleseed by Steven Kellogg. I personally prefer both the text and the wood-cut artwook in American Tall Tales by Mary Osborne. This text also has several other tall tales in it, including Davy Crockett, Stormalong, John Henry, Paul Bunyan, and others. There is information before each story about the history of the people or events behind the tale, which you could read aloud or skip. This book made my boys realize that Johnny Appleseed was a real person (which I thought they knew, but turned out they didn't).
Have fun!

My favorite version is the illustrated story in verse by Reeve Lindbergh - we have it here from the library right now.
Look here

I like the Reeve Lindbergh version, too.
Another good one with folksy style illustrations is Will Moses' Johnny Appleseed. It has the longest text of those mentioned so is really complete. It is really lovely - highly recommended.
A recent favorite is Jane Yolen's newly published one, Johnny Appleseed. Great illustrations! In it Jane Yolen writes to help sort out the fact from the fiction about his legend. Each page starts with a few lines of a poem about Johnny Appleseed, then gives a brief history from his life that relates to that section. There is also a fact after the text that clarifies something in the history or points to the source of the information. It is really informative and well written.

I second Will Moses' Johnny Appleseed. It is a popular version here at our house...especially when we studied the Grandma Moses in art during American History last year at Classical Conversations & discovered that Will Moses was her great-grandson.
