My favorite is Catholic Christianity by Peter Kreeft.

This is the book that initiated my conversion:
Believing in Jesus
It was given to me by a dear priest at my husband's church. I couldn't put it down and by the time I was finished I was ready to convert!

A good website i go to a lot is www.catholic.com. Great information and has a an apologetic forum where you can ask any question and an Apologetic will reply. It has great resources!!

I would second this recommendation for the Catholic Answers website very highly.
Also:
CUF - Catholic United for the Faith - Their "Faith Facts" provide a clear, accurate, and understandable explanation of Catholic beliefs.
Jimmy Akin's site- He's an apologist and author who works for Catholic Answers.
Phatmass - The resources section includes an incredible collection of materials on Catholic beliefs in its "Catholic Defense Directory." It links lots of great apologetics articles and references from all over the web all in one place.
As far as books, F. J. Sheed's Theology for Beginners along with Peter Kreeft books (like the one Elizabeth suggested) are the best basic overviews on the topic.
The new Compendium Catechism of the Catholic Church is a concise and very easily understandable coverage of the catechism.
I also really like the series from Emmaus Road Publishing - Catholic for a Reason. So far there are three books in the series - great insight into Church teachings by various well-known authors.

I read the comment on your blog, Cay, and it hit me that something very basic, short, and easy to read (but complete and orthodox) would be the booklet Pillar of Fire, Pillar of Truth published by Catholic Answers. From what Angela asked this may best suit her needs for an overview of the Catholic faith.

Cay,
We just picked up this book Catholicism for Dummies the other day.
It's written by Father John Trigilio of EWTN's show, Web of Faith. I wanted a concise, easy to understand guide to go through with the kids this year for the study of our precious Faith, because I felt a huge need to have gone through our entire faith together as a family. You can search through the book at Amazon too, to see if it'll work for your purposes.
We're also going to use the Compendium to the Catechism, Compendium to the Catechism and the Beginnings Apologetics series as well. Beginning Apologetics
I want my kids to have the basics down, and for them to be able to understand their faith well, and to defend it, particularly in this world today.
I think these resources are fantastic, and easy to understand. I hope this helps!

Another nice one that is very readable and covers all the basics is Alan Schreck's Catholic and Christian: An Explanation of Commonly Misunderstood Catholic Beliefs. Hth!
