We are getting our menus planned for Lent and I am wondering what others are doing?

We are using these two cookbooks:
From a Monastery Kitchen
and
Twelve Months of Monastery Soups
These books are by
Brother Victor-Antoine d'Avila-Latourrette

I finally bought these books after borrowing them from the library so many times.   

What are your menu plans?

simple, inexpensive, legume based, and cleaning out the pantry!!
I most likely will come up with combinations by doing ingredient searches on recipe websites, of what I already have on hand, and go from there.

we have to really tighten up the food budget, and Lent is the perfect time to do it! (in fact, we have already started!)

Our church does a soup and bread supper after Stations of the Cross on Fridays during Lent. So that helps out here.. we get a variety (especially the grown ups) without having to come up with the ideas ourselves

You could try the ancient german tradition of just drinking a heavy yeast beer! and a little bread or pretzels.

Seriously, I do tend to make a lot of quiche like meals. Sometimes it is in the form of a pizza, but using the egg-milk base, not tomato. I try lots of different veggies, whatever is on hand. You could use a yeast dough or a pie dough.

I did place on hold the book recommended above , Monastery Soups.

My girls love very simple foods the best. The less ingredients the better! So if I would serve them natural brown rice cooked with a little onion and made creamy with a shot of heavy cream, they are in heaven! Because we are living with my parents this american year, I also have to consider my father's appetite. He does not like rice and he does not like fish.!
I think we will be eating a lot of quiche.
