Can somebody tell me how much overlap there is between these two in CONTENT?

I was thinking of getting Sofia Cavalleti's books for 6-9 (Living Liturgy), it covers all the sacraments. But it seems like Moira's manual only really covers the Eucharist and Mass.

I don't know anything about Moira's manuals, but I have Living Liturgy, and it is not a manual of presentations. It's a series of reflections on the liturgy--meant for adults, to help them better understand the mysteries they will be presenting as catechists.

The "elementary" in the title means "core" rather than a level of educational development.

Religious Potential of the Child: Ages 6-12 has more about level 2 and 3 catechesis, and some descriptions of presentations (but it is not a manual).

I haven't seen Moira's albums since I got my level 2 training finished....but I can tell you what is in Level 2.
More parables...moral ones
Maxims of Jesus culminating the in the Great Commandment
Pin maps of places Jesus went (3 of them)
Extensions of altar work from Level 1
Extensions from parables in Level 1
History of the Kingdom of God (four presentations similar to the timelines from Montessori time lines)
Baptism extensions
perhaps more...but my mind is slow tonight...
