My 7th grade son will be taking a Texas History class outsourced this year.

I would like to find some biographies written at middle school or below level about Catholic saints that were part of Texas history to read in his spare time to augment the class.

Does anyone have any suggestions?

Not too many US saints in general - if you go with blessed and venerables you get a few more. Some years back we compiled a listing of the saints, blessed, venerables, and servants of God by state.

This is what we have for Texas.

Texas
Eusebio Kino, S.J. (August 10, 1645 – March 15, 1711)
Ven. Antonio Margil (August 18,1657 – August 6, 1726)

There is a lot more out there on Fr. Kino, who is a servant of God (meaning his cause for canonization is open but hasn't been declared Venerable yet)

The 2 children's chapter books I know of on Fr. Kino are:

Father Kino; priest to the Pimas by Ann Nolan Clark
Desert padre : Eusebio Francisco Kino by John Thayer


There is also The Padre on horseback by Herbert Bolton

Crazy coincidence - this is the topic of this summer's Spotlight article at CatholicHistory.net - I thought I would check and see what they had there on Texas history and found it was the feature article from July. My bil is the editor of this website and I usually get an email, but didn't remember getting one recently.

It's a good overview of the history.
