Would it be safe to say that using a non Catholic curricula on creation for science should not really be problematic? Aren't the view points the same as far as creation for Protestant and Catholic? I am specifically refering to 106 Days of Creation Studies at

I just looked at this and unfortunately, the sample doesn't go far enough to let you see their views on evolution, which does have an entry in the table of contents.
Most evangelical protestants view the Bible literally, as in 7 twenty-four hour days of Creation. many also hold a young-earth view. Both of these are not Catholic interpretations. In addition, the Church recognizes evolution as not being incompatible with a Divine Creator.
If you are comfortable with teaching the Church's positions and can skip over objectionable stuff in that book, it does look like something that could be used for activities.
When I started teaching Ancient history to my 6th grader, we began with Genesis in the Bible and he did drawings of the 'seven days' to put in his book of centuries. Then we read the early books of the OT along with more secular works like Story of the World, etc. so he could see how the Bible really does tell real history.

We weren't approaching it from a science view, though.
