My Mom gave us a wonderful book called The Weather Detectives by Mark Hicks that is a true Living book. It has an engaging story and experiments to do throughout.

This topic briefly came up last summer in relation to a weather lapbook and I posted some ideas and interesting websites we had used. I wish the discussion had continued. I love weather study.
Books with good activities/experiments:
Wild About Weather
How the Weather Works
Janice VanCleave's Weather
Weather
Usborne has a couple of very informational books - includes some experiments
Weather and Climate (Usborne Science & Experiements series)
Introduction to Weather and Climate Change-this series is a great resource for links to the internet related to topic.
Art boook - Arty Facts: Weather & Art Activities
Informational/pictorial books (no activites):
WeatherDK Eyewitness Books
DK Guide to Weather
Scholastic Atlas of Weather
A lot of the other books I've used are picture books - probably too young for your children. Hopefully someone have good ideas for living weather books for older ones. I really can only think of ones that deal with extreme weather like floods, tornados, etc.
A homeschooling friend of mine did a weather unit based on the Boy Scouts weather merit badge requirements. I believe they have a booklet for it.
Visiting a news station and talking with the meterologist is a great learning activity.

Here are instructions for making windy things including an anemometer.
I have some suggestions for books on my Earth Science page. Also, here's a link to the Beaufort Scale to determine wind speed by observation.
My older kids enjoyed listening to a recording of Tying Down the Wind which is about the weather on Mt. Washington.

For a little over $10, there's Ein-o's Weather Kit, which has a small thermometer, barometer, evaporation chamber, anenometer, and a rain gauge (I think). They are plastic, assemble yourself instruments, perhaps better suited to a younger student than yours, but really work and can save you lots of time and money if you want to measure climate conditions. One caveat, the barometer measures relative air pressure (one day compared to another) as opposed to actual mm of pressure. My younger students loved this kit!
