Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Most field guides should have the Latin name listed right after the common name. As for sparrow, they are in the family Fringillidae (except the introduced house sparrow, which is a Ploceidid), but there are several genera and many species. So to find the Latin name, you would have to narrow it down a bit more.
Ex:
Field sparrow: Spizella pusilla
Song sparrow: Melospiza melodia
Fox sparrow: Passerella iliaca
Vesper sparrow: Poocetes graminineus

For online guides I like Cornell:
here
and there is one called What Bird that is good, too.
Have fun!

I don't know of any sites that would be complete for all the above listed topics. Generally you can find some for one area like just plants but because this would have to be such a huge volume of names not sure if it would be exactly what you are looking for.

I would suggest googling the plant or animal you are looking for with the term "species name" or "scientific name" and to get the specific one each time.

For example that is how I got shamrock

While this isn't exactly what you were looking for, this is a very interesting site for explaining latin names for plants - Dictionary of Botanic Epithets

Here is a good one for finding the names of insects.
