How far back do we need to keep our check carbons? I have read 3, 7 and 10 years. We do not have complicated finances, I'm hoping 3 years is sufficient.

It's 3 years unless (here is the catch) the check was related to something on your income tax (charitable deduction, business expense, home improvement that adds to the basis of your home, stuff like that). Then I would keep those carbons forever...with my tax returns, if possible.
