Does anyone own Whole Foods Allergy Cookbook by Cybele Pascale?

I can't find my chicken scratch notes for the recipe for potato salad from this book. Could someone be a dear heart and type it up for me, pretty please?

i went ahead and typed it up for you: (American Picnic Potato Salad, i hope this was what you were looking for)

2 lbs. boiling potatoes
2 tbsp white vinegar
1/2 cup olive oil
s&p
1/4 cup onion, finely chopped
2 stalks celery, finely chopped
1 med cucumber, peeled, quartered, deseeded, and cut into 1/4 inch pieces
3 tbsp dijon mustard
3 tbsp sour gherkin juice
8 sour baby gherkins, cut up small
2 tbsp chopped parsley
paprika

peel potatoes and cut into 1 1/2 inch chunks. put in a pot and cover with water. bring to a boil and boil about 15 minutes until potatoes are tender
when pricked with a fork. drain and pour potatoes into a bowl. drizzle with vinegar, olive oil, salt and pepper. toss. add onion, celery,
cucumber, mustard, gherkin juice, gherkins, and parsley. cover and refrigerate overnight if possible, or at least a couple of hours. just before serving,
sprinkle top with paprika.

serves 4-6.

in case you like mayo and are looking for an alternative, we recently tried vegenaise in a potato salad i brought to a party -- everyone loved it!!! no eggs, no cholesterol, etc. i wish i had discovered it before.

Thanks, Stef. That's the one. Very yummy, although I needed to use less mustard and eliminate the cukes. I've enjoyed the mayo-free potato salads. G's birthday party is tomorrow and I was trying to decide whether to serve this or just mashed potatoes. I'm trying to make an allergy free birthday bash since it is his day.

I do miss the mayo, but haven't had luck trying egg free mayo. Vegenaise? I'll have to look for it.

I really like this cookbook...borrowed it from the library and waiting until I get some funny money to purchase it for myself. It seems to be checked out all the time.
