As we've all been dealing with ferocious heat, I thought we might start a thread on dinners for hot weather.
Last night, I did:
Hummus with Rice chips
veggies and dip
sliced french bread with salami
fresh blueberries and nectarines in a rasberry yogurt
That was dinner and it was YUMMY!
Any other ideas?

As my sil always says...cereal is not just for breakfast anymore!!!
I'm thankful for the grill and my dh never minds grilling even in extreme heat...he just wants a cold beer while he stands there.

Home made chicken salad on a tomato "flower" with sliced boiled eggs and toasted french bread with butter. Iced pineapple/orange juice/ginger ale to drink. Orange sherbet for dessert.
Boil the chicken breasts for the chicken salad in the morning while it is still cool, de-bone and save the meat for making the salad later, or marinate it for extra flavor.
I am all about cool cooking lately as we have no A/C and it is HOT in here.

A favorite is taco salad. I usually make lots of "taco" meat (ie. seasoned) when I make tacos or burritos. I toss it in the freezer in ziplock bags. It saves on heating up the kitchen on the hot days.
Thaw it and add it to lettuce, tomato, onion (red or green,) cucumber, cheese, and nacho-type chips, mix with dressing (we usually use sweet and spicy french- wishbone.)
Refrigerate for an hour (oh, I leave the chips and cheese out until we are ready to eat, so they don't get soft or mushy.)
The boys also love subs.
We are looking forward to a couple of weeks of 90' weather. I am usually wimpy about the heat (I was in the misting stations at the zoo on Monday as much as the boys!)

As we're off to the pool, dh grilled chicken breasts in BBQ sauce for our return.
We'll have that plus cantaloupe - with our favorite chant, "Don't be a dope, eat a cantaloupe."
We're so creative here.

lots of our farm-grown sweet corn, tomatoes, watermelon, and cantaloupe with an occasional batch of fried green tomatoes and ice cream cones for dessert

Good thread Maria!
I picked up sweet corn and peaches at the Farm Market last week and we had grilled chicken and smoked sausage kabobs with it. I sliced the peached and added zuchinni from the garden to the grill. BTW, leftover grilled zuchinni makes great little pita bread pizzas for lunch.
