After throwing out more small saucepans than I care to say, I'm at my wit's end! My dh loves poached eggs for breakfast and would literally eat one every morning. I despise the things but I digress. Anyway, within a few weeks of poaching eggs in non-stick pans, the interior starts to deteriorate and I throw out the pan. I decided to invest in really good stainless steel pans and after TWO, count them TWO, egg-poachings, my brand new pan is pitted. Now, what am I missing here? Are eggs toxic when poached<VBG>? I tried an egg-poacher pan and it emitted really awful fumes so that got dumped too. I tried a microwave version and my dh hated the texture of the poached egg, so that got trashed. I'm losing patience. What am I doing wrong? Should a quality ss pan pit after poaching two eggs? I'm discouraged.

How do YOU poach an egg? Are you using pans like these? or putting them directly into the water? I think these poached egg pans are really "coddled" eggs. But if you are using a pan like this and it's stainless steel, SS pits when you soak it in water. And your water might be pitting it.
I have a few pointers about nonstick pans.
Poaching an egg doesn't look easy, but to use any non-stick cookware, you have to use med-med high heat ONLY. The correct utensils should be used (nylon, wooden, silicone). If the pan is truly non-stick, the residue should easily clean off. Be sure to clean the non-stick pan with only soft bristled brush (no brillo pads for example) or sponge.

How do you poach the eggs?
Is this the carefully pour a cracked egg into slowly boiling water?
My Mom had a stovetop egg poacher, basically a doubleboiler rack with 8 cups for the 8 eggs.
BTW-I would return the pans that pitted. Do not remember any cautions that you cannot cook eggs in ss pans!

Thanks so much for the advice and links! The links showed that it isn't anything that I'm doing, so I called the Extension Home Economist to get her take on the pans. Viv, she's with you--she encouraged me to return them. I called the dept store and plan to return them tomorrow. I have the receipt but not the box! Yikes!
The Extension specialist said that she's had ss pans for nearly 15 years and they still look good, so something has to be defective with these. Big Sigh........
I hope they'll give me my money back. Any recommendations for a particular brand name to try to find?

The Pampered Chef's Executive cookware is guaranteed for life, but it must be handwashed. I have had their Generation 2 set (these were not lifetime guaranteed) for 8 years and it still works fine. Our small saute pan has seen lots of use lately. Our eight year old prepares an egg for himself and me and any of his siblings who are willing to eat his eggs for as many days a week as I will allow. (can you tell I am a bit sick of eggs? )

I recently replaced all of the Farberware Millenium non-stick cookware that we got as wedding gifts. I chose Cuisinart Cookware, and have been very happy with it. I love having pots and pans that can go in the dishwasher

I like the Farberware stainless and the Revere Ware that I get at Salvation Army. Other than that, I only use cast iron. The Farberware is great for anything that I need to use at higher temps, it has a cast aluminum bottom.

I received Farberware Stainless Steel pots and pans for bridal shower gifts. My reasoning way back when registering for them was that my mom got those for HER wedding almost 30 years earlier, and they were still in great condition! I've added some non-stick pots and pans over the years, but my Farberware are going strong. I love my large stockpot from that collection most.

Irene, That's what my mother has, and I loved using, so I of course registered for that for my wedding. But that was only 6 years ago, and the quality has changed. My pans are pitted, the plastic handles are cracked. But when I go home and see my mother's pots (well used) hers look so pristine and in good shape. China products strike again.
