I don't know what the weather is like for the rest of you ladies, but it is getting hot around here. This is the time of year I start looking for recipes that involve minimal stove-time so as to avoid heating up the house. Tell me, what are your favorite "cool" recipes for summer dinners?

One of our favorites is Chicken Ranch Salad. It's the result of some experimentation in the kitchen. If you use leftover cooked chicken and broccoli, the only thing to cook is the pasta. This is the first time I've written it down--I usually just use however much chicken and broccoli I happen to have leftover--so I'm guessing at the amounts. It's nice and cool on a hot day.

Chicken Ranch Salad
8oz. whole wheat pasta, cooked and drained
2-4 T. chopped onion
2-4 cups broccoli cooked crisp-tender (you could probably also use raw broccoli)
1-2 cups chopped, cooked chicken

Mix together in a large bowl and pour ranch dressing over to coat. Creamy Italian would probably taste good, too. Here's recipe for ranch-tasting dressing that we use:
1/2 C. mayonnaise
1/2 C. yogurt
1/2 t. parsley flakes
1/4 t. garlic powder
1/4 t. onion powder
1/4 t. seasoned salt

We grill a lot.

Hamburgers, steak, chicken with BBQ sauce, chicken marinated first, bratwurts, hot dogs (natural ones), pork chops, lamb chops, Corn in the husks, summer squash, bacon. . .

We're grilling tonight-steak and hamburgers (make sure they're well done and don't put them back on the raw meat plate. Salmonella and e.coli is very dangerous for children (and adults)

We eat a lot of fresh fruit salad, strawberry spinach salad, cottage cheese, hummus and pita, pesto and pita, and egg salad.
