Hi Martha,
We're in Plano, a suburb of Dallas...about 50 minutes from Fort Worth, no traffic!
There are tons of Catholic homeschoolers in the DFW area, though I am only familiar with my side of the metroplex (the Dallas side).   
I'm sure other families will chime in...Charlotte?

What areas are best to have a home in? What areas to avoid? How is the housing market there?

Texas is one of the best states for homeschooling. You do nothing! No filing; no reporting; no testing. It is treated the same as private schooling which is totally unregulated (as lots of stuff tends to be in TX.) I haven't lived in the Ft Worth area, but Austin had a ton of homeschooling support. My son just got stationed in Ft Worth. If you go, eat some Taco Cabana for me.

I grew up in Fort Worth and just love the area. My impression (from friends and family who still live there) is that there are some very hs friendly groups and whatnot. St. Elizabeth Ann Seton in Keller (north of FW) has an active group, as far as I know. (It was also my parish growing up and where we got married!)
Being still relatively young (26), my memories of growing up there are very vivid and things haven't changed drastically. I felt really safe there, downtown FW is charming but not overwhelming like Dallas, and I love Texas culture!
Plus, there's amazing bluebonnets in the spring! I miss those so much when I'm here in the snow in March!
As for the Taco Cabana that Leah suggests, I second that! There is nothing like some good texmex!!!
