Hi Ladies:
I need to enlist your help for a recipe quick!! My midshipman son and three of his classmates are staying at our house tomorrow night for their first day of Spring Break from the Naval Academy. I am so excited! They will be hungry for homemade food. My first thought was steak, but it is Friday. So I need to come up with something really good, filling and hardy. Any ideas or good recipes you can pass along.

Mexican food heavy on beans and rice? Fish tacos?
The sides alone will fill up alot. Maybe a very hearty minestrone and some bread, a big salad?
Just tossing out some ideas..

There's always salmon if you are looking for an alternative to steak.
A meatless thing that we enjoy with company is cheese fondue with lots of crusty bread, apples, and pears to dip.
I've also done this successfully served with cornbread for Lenten company.
Slow Cooker Spicy Lentil Chili
1 TBL olive oil
1 onion
1 bell pepper
2 cloves garlic
2 TBL chili powder(or to taste)
1 1/2 C. dried lentils
1 28oz can crushed tomatoes
1/3 C molasses
1/2 tsp. ground allspice
Cayenne pepper to taste
salt and pepper
2 C. water
1 C. apple juice
Saute the vegies in oil in a pan for 5 min. stir in chili powder and cook 30 seconds more. Transfer this into the slow cooker. Add lentils, tomatoes, molasses, allspice and season with cayenne, salt, and pepper. Stir in water and apple juice, cover and cook on low for 8 hours. If it gets too thick, add water.

Cheese raviolis, with spinach salad, boiled eggs?

A TeX Mex and chips thing would be a nice appetizer
Refried beans on the bottom
guacamole next
a 1 c sour cream/ 1/2 c mayo/ 1 pkg.taco seasoning mix next
tomatoes, onion, black olives, and cheese on the top and serve with chips.

The problem with most bean recipes if there is no dairy, there's no fat to fill you up!
How about just mac and cheese? Guys just love the comfort food, and to have some non-boxed...my dh would be in heaven.

I agree with Jenn. Pasta in some shape or form is the most filling thing I can think of. If not mac and cheese, what about an easy alfredo sauce? Also a hearty soup with bread. I just made this cabbage soup last night and it was great.
* 3 tablespoons olive oil
* 3/4 onion, chopped
* 2 cloves garlic, chopped
* 2 quarts water
* 5 cubes chicken bouillon
* 1 teaspoon salt, or to taste
* 1/2 teaspoon black pepper, or to taste
* 1/2 head cabbage, cored and coarsely chopped
* 1 (14.5 ounce) can Italian-style stewed tomatoes,
drained and diced
* 1 can dark red kidney beans, drained and rinsed
1. In a large stockpot, heat olive oil over medium heat. Stir in onion and garlic; cook until onion is transparent, about 5 minutes.
2. Stir in water, bouillon, salt, and pepper. Bring to a boil, then stir in cabbage. Simmer until cabbage wilts, about 10 minutes.
3. Stir in tomatoes and beans. Return to a boil, then simmer 15 minutes, stirring often.

lasagna!! salad, french bread.. you get FULL whether or not there's meat in the sauce.. and it's one of those "can't beat homemade" dishes.

Here is the lasagna recipe we will be having tomorrow. It is my Dad's birthday so I wanted something nice.
Vegetable Lasagna
We have had it before and it is really yummy.

I am trying this recipe for tomorrow's dinner. Now, I can't say anything about taste since we haven't had it before, but it looks like a hardy meal. I will let you know how it turns out. Have a fun evening!

Thank you all so much for your help!! The suggestions are all wonderful. I am going to save them as well for meatless meal ideas for my crew.
For tomorrow night's meal I have decided on Baked Ziti, homemade bread with lots of butter, green salad and homemade brownies and ice cream for dessert. The Ziti recipe is from a very dear friend whose family is Italian.
I will let you all know how it goes. Say a little prayer. My son has told me that the "guys" can't wait to see how a house of 10 kids functions! I can only imagine what they think! This should be fun!
