Dear Friends,

We had this delicious Minestrone Soup, published in Martha Stewart Everyday Food Magazine, for dinner. It was so easy and so wonderful that I had to share the recipe. I tweaked it a little leaving out the cabbage (because I had none on hand), but it was still very flavorful, not to mention healthy.

Thanks to the advice of Cook's Illustrated, I add a chunk of the parm or romano cheese rind to the pot of cooking vegetables. Remove it at serving time. It adds a nice flavor.
