I want to make an icecream cake for dd's 6th bday. Since im using vanilla ice cream, i thought she would love a strawberry cake to go with it. I found one online that i can use but thought maybe some of you ladies might have a tried and true recipe. There are a few restrictions though for us. It has to be from scratch b/c of dd's food allergies. She cant have any premade cake mixes. And she has a dairy allergy and there's no soy sub. for things like yogurt, sour cream whipped cream etc. here on base. We just have soy milk to sub for cows milk. So, if any of you ladies have a great made from scratch recipe that you can share, i'd appreciate it.


And, im also looking for a yummy Strawberry flavored icing. Again, nothing that required whipped cream etc. Im trying out a few but again, thought you ladies might have something. TIA!!

Can she have the Dr. Oetker's cake mixes? If so, you might want to try the Cake Mix Doctor book (try the library). There is an excellent triple-decker strawberry cake recipe in it.

Cake Ingredients include:
shortening (for the pans),
flour
white cake mix -- I used Dr. O's
strawberry gelatin
oil
sugar
whole milk -- maybe you can sub the soy or almond?? -- it's a 1/2 c. milk, BTW
eggs
fresh strawberries and their juice (yes, the juice)

Frosting Ingredients include:
butter (1 stick -- do you have a sub for this?)
confectioner's sugar
more fresh strawberries and their juice

Also...
more strawberries for garnish
