When touring our recent guests around Amish country we visited a little store and I found a cookbook that I actually bought. I usually get them from the library and if I LOVE them then might buy them. I bought this one first thing
It is called Simply in Season by Mary Beth Lind and Cathleen Hockman-Wert. It is set up like Saving Dinner in that it lists recipes in seasons. It takes into account the various fruits/vegies that are in season. Most of the recipes look fairly simple, all are healthy(even substitutes for things like sweetened condensed milk are in the back)and they included crock pot recipes--awesome.
I am trying to increase our intake of vegies and needed some more ideas other than just shredding carrots and zucchini to put in mac and cheese and spaghetti sauce.
Just sharing.....

I love finding cookbooks when we travel. in New England we found some little ones for soups, apples, and muffins that we use often.

my dh found a corn chowder recipe that is so yummy.

We are 2 for 3 here with the cookbook so far.
It is set up so nice and some nights I bring it to bed with me and just read the extra stuff they put in there about nutrition--I should have been a nutritionist in my working days. At least now I know what I want to be when I grow up, besides being a mom
The kids(and I) give the following 2 thumbs up big time.....Zucchini Garden Chowder(I keep eating it for snack ) and the crockpot Chicken Cacciatore---mmmmmmm!!The crockpot recipe did not use one canned thing! It was awesome and pretty easy.
We didn't care for Apricot chicken. Though I MAY have overcooked it-oops!

When we return from our trip this weekend we will have some Slow Cooker Enchiladas, Greek Tomato Salad, Fresh Tomato and Basil PAsta, and Super Stuffed Tortillas.
