Cold-cut subs, fresh from the Italian bakery, about 10 min ago!
Dh just walked in with all the ingredients - fresh meats, cheese and bread! Sadly, he lost a jar of red peppers as he left the store, it fell out of the bottom of the box.

Either taco salad or leftover pizza. I'm thinking pizza.
I have a nice refreshing beverage I've been meaning to share on the summer drinks thread.....
I adapted this from a recipe on the Fresh Produce blog.
.5 can pineapple concentrate
.5 can limeade
lots of ice
seltzer water
Dump it into a pitcher and enjoy.
I've been practically living on this! It is refreshing and YUM-O!

Today is Sammy's birthday so he requested pizza. I took advantage of online ordering even! Tomorrow MissyC is bringing us dinner. I am very blessed with woderful friends!

Pizza here.
Partly because its hot and I'm lazy, and partly because we're leaving town first thing Sat morning, and we can eat the leftovers for most meals between now and then...lol. I can pack, etc, and not "worry" about meals.

BLT's or some version of bacon sandwiches. One w/o the lettuce, one w/o the tomatoes, one just bacon(and a side of yogurt). You get the idea. We have tons of fresh tomatoes, I made bread this morning(very early), and I can cook the bacon in the microwave!

County Fair Entry Day. Dinner - a total afterthought. All day putting the finishing touches on Fair entries, 105 degrees outside, 95 inside, air conditioner has been broken for the last 12 days - the parts needed are "out of stock", no prediction of when they will become available!

We had a pasta salad with chicken and pineapple. I made it in the morning so it was cold and ready to go for dinner.
Tomorrow, I think it will be a veggie tray and smoothies.

We had various pasta things (mine: diced canned tomatoes, lots of garlic and onion, black olives, fresh basil, dried oregano). Dd nuked a hot dog.
We do so much seasonal food here, it's not even funny. I tried a pork ragu pasta sauce recipe a couple of weeks ago...it was good, but too "wintry" because you only get that type of sauce in the mountains of Italy...mostly in winter. It didn't sit right.
Squash on the grill...thin-peeled zucchini with a vinaigrette dressing, herbs and onions...corn on the grill...pesto sauce...those are summer foods.
I admit to trying (and loving) Korean homemade food a week or so ago...cucumber kimchee, yum!
Remember that people in hot climates often eat spicy foods to bring on a sweat, which ultimately is cooling. Bring on the jalapenos!

Last night we had grilled Mahi-Mahi with dill and lemon and grilled corn on the cob wrapped in foil with butter and half a clove of garlic. You know, I'd never included the garlic in the corn packet before and it made the corn taste like CornNuts of all things!

Jennifer, I have to tell you, I tried mango! Oh MY YUM!! I now have a bunch in my freezer that I chunked up ready to throw in my smoothies! I also LOVE it fresh, so juicy and perfect for this hot weather!

A summer fav around here is chicken salad made from either a boiled fryer, or a precooked one from Costco. Chop up the chicken, add chopped celery, some halved grapes (red is good for color), some salted cashews, chow mien noodles (just before serving, so they don't sit and get too soft) and mix it all with mayo and top with fresh ground pepper... Yuuummmmy! You get cool, sweet and salty all in one shot!

I accidentally discovered that cooking later helps...
Last night was pancakes and sausages.
The night before was 'vegetable plate' of veggie side dishes.
My husband refuses to eat cold meat so no delicious cold chicken salads here...

Last night, DH cooked burgers on the grill.
Tonight it's pizza for my son's b-day.
We love raw vegetables, and I love cold meat dishes...
I'll have to try some of the suggestions! Thanks!

only 90 degrees here but we still had my ds20 (the chef) cook marinated steaks on the grill. Yummy Yummy!! and I didn't have to cook! That is the best thing.
