My dh has started back to a nighttime teaching schedule. He will not be home before 8:00 M-Th. I will have the dc at the pool until around 6. Upon returning home, I will be wiped out from the day, and needing a meal that can be saved for dh. I am hoping to use the crockpot 2-3 days week, and grill the others.(Which I'm not so good at! )

You can use this chicken to make soft tacos, crunchy tacos, enchiladas, burritos or just put it on top of a bunch of greens for a quick taco salad.

Shredded Chicken
8-10 boneless, skinless chicken thighs (or 5-6 breast halves)
3/4 C. enchilada sauce
1/4 to 1/2 salsa
2 tsp. cumin
1 Tbl. cilantro
chili powder (to taste)

Place chicken in crockpot and cover with the rest of the ingredients. Cook on Low for 8 hours.

The chicken will shred on it's own as it cooks. You might have to stir it once or twice to "break it up". My kids are fairly picky and they love it in a flour tortilla; Husband and I eat it on a salad. Above is my variation of the original recipe that I will list below:

8-10 chicken thighs (skinless)
1 (6 oz.) can tomato paste
1 (1.5 oz.) packet dry enchilada mix
1 C. water
1/2 C. shredded monterrey jack or cheddar cheese

To Garnish:
black olives
sour cream
green onions
Place chicken in crockpot. Mix tomato paste, enchilada powder and water in a separate bowl and pour over chicken. Cook on low for 8 hours. Turn to High and stir in cheese. If sauce is too thick, add more water. Serve in a shallow dish garnished with olives, sour cream and onions on top.

I love this recipe--wish my family ate more than just chicken!

Crockpot Vegetarian Chili

1 11-oz can black beans
1 15-oz can kidney beans, drained and rinsed
1 16-oz can vegetarian baked beans
1 15-oz can garbanzo beans, drained and rinsed
1 14.5-oz can chopped tomatoes in puree
1 15-oz can whole kernel corn, drained
1 onion, chopped
1 green pepper, chopped
2 cloves garlic
1 Tbsp chili powder
1 Tbsp dried parsley
1 Tbsp dried oregano
1 Tbsp dried basil

Combine ingredients and cook on high for 2 hours.

I should add that for our family of six, the recipe above will stretch for 3 or 4 meals (maybe 2 dinners and 2 lunches). We'll have tacos for dinner, tostadas or nachos for lunch with the left overs on a salad or tucked into an enchilada casserole.

Delicious Pulled Pork Sandwiches couldn't be easier.


Throw in a pork sirloin for 8-10 hours.

When finished, shred the meat up with a fork and add in a bottle of your favorite BBQ sauce... continue heating until ready to serve!

Serve over buns!

We just had Beef Burgundy last night. It requires that you cook noodles or have leftover mashed potatoes or something on hand, but it's so simple and my kids love it!

Our family has nine eaters in it. We use:

2-3 pounds of stew meat, thawed
1-2 cans of cream of mushroom soup
1-2 cans of button mushrooms (depends on how much your family likes them)
1/2 - 1 cup of cooking wine *or* chicken or beef broth
1 envelope of onion soup mix

Mix it all together in the slow cooker and cook on low for 8-10 hours.

I love this thread! But does anyone have any ideas for low-salt recipes? Dh has blood pressure worries and we try to limit salt. I've noticed that some of these ready sauces or soups have the RDA of salt in them, in one jar . Anyone?

Easy Chicken in a Pot can have as little or much salt as you want.

Simply throw a whole fryer chicken in the crock... and about 10 garlic cloves chopped (garlic mellows as it cooks so be liberal with it!)

Cooks a juicy, tender bird in about 8 hours.

I usually cut up about 4 potatoes or so and throw in some carrots and an onion too...

(salt, pepper, Italian seasoning to taste)

You could substitute low-sodium canned soups in some of these recipes, I know they're out there.

I don't know if anyone makes a low-sodium salsa, but here is a recipe to make your own enchilada sauce. You might be able to cook the chicken with sauce substituting for the salsa or puree some tomatoes, green chili, bell pepper and onions to make your own.

A fryer is a small, young chicken suitable for frying. It is also sold whole and not pre-cut.

Crockpot Nachos

1 lb. ground beef or turkey
[can substitute two cans of black beans or kidney beans]
1/4 c. diced onions
1/4 c. diced green peppers
1 bottle taco sauce (mild or medium)
8 oz. can tomato sauce
1 can cream of mushroom soup
1 env. taco seasoning
2 cups shredded cheddar cheese

On the side:
Refried beans (can put in with other stuff if you like)
Baked Tostitos (or serve with torn tortillas)
Lettuce
Tomatoes
Sour cream

Brown meat with onions and peppers (if using beans, I just toss the veggies in the Crockpot uncooked). Mix everything else in Crockpot. Cook on low 4 or 5 hours, or cook on High 2 to 3 hours.

My 9 y.o. son has made this (without browning the meat or cutting the vegetables). Goes together fast, too.

Kelly- we tried the Crockpot Nachos lastnight, and it was a huge hit! My DH said the leftovers would be great over a hotdog....like a chilidog.Thankyou!!
