Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

I am sitting here and suffering the 'rigours of body and mind'.....for a custard tart.

My knight has been sent out into the night in the rain to find such a thing.

This has been SUCH a good pregnancy (thank you so much for prayers) except for a virus recently that would have knocked me around even if I weren't pregnant.

But the CRAVINGS...lasagna..I ate myself through that one but just won't mention how many lasagna's it took.

I also crave cheese and spaghetti bolognese and I went out with my school friends on the weekend to celebrate a friend's birthday and I ordered Spagetti Bolognese feeling very happy with myself until the orders arrived..

I dread spaghetti bolognese that has way too much pasta, not enough sauce and sauce that has a scarce amount of meat. Well you won't believe it but this dish had tones of sauce, so much meat that it was the predominate ingredient and I was hughly disappointed!

You see my delicate and precise cravings are such that I want meat but not too much and when I say I crave spaghetti bolognese, it is the pasta in particular that is tantalizing my mind at present. The parmesen on top was a teaspoon or less...

I looked to my left and one dear friend had ordered Fettucini Carbonara, and all I could see was juicy bits of succulent bacon and that cheesy, fragrant sauce..

I looked to my right and another dear friend was eating an authentic looking pizza with mediterranian veges smothered in cheese.

SIGH! Just felt like sharing my craving woes this evening...still waiting for my knight in shining armour to arrrive...

Anne and Stephanie - This dreary Monday morning needed a good laugh. Thanks for providing it (Well, it's not a custard tart, but the laugh will have to do for me right now ....)

Oh, Anne (my namesake!), I completely understand your particulars when it comes to cravings!! My problem with pregnancy is that I'm always hungry, but nothing sounds good. I don't get cravings. I wish I did!

I take that back. Before this pregnancy, I found out I was gluten intol., and now all I want is takeout pizza. The real stuff, folks, none of this rice crust phoney-baloney business that I can pass off to my kids as real pizza b/c they're too young to know better.

I want Dominoes.

Anne, you are blessed to have such a loving knight. All I seem to crave is pizza. Unfortunately, my oven is broken, so I can't have it as often as I would like Great thread!

oh, Anne, I TOTALLY understand about thinking you REALLY want this one specific thing and then not being satisfied!
Baked beans was mine -- and then, once it was all heated up and ready, I was positively holding back vomit as I dumped it straight into the trash!

Now, I crave Corn flakes, Taco Bell's bean burritos and yogurt -- and please don't try and make me have to eat anything else and esp. have to even *smell* meat cooking or I'll throw up. And NO sweets! Isn't that weird?

Basically, sometimes I just wish I could have a feeding tube in place from which I would get nutrition ( cuz I AM hungry all the time) but not have to worry about deciding what the HECK I want to try and choke down now.

Well, I'm 13 wks, so maybe this will all be over soon. Is the end in sight for you yet?

If you've got a toaster, a microwave, English muffins, a jar of spaghetti sauce and some mozzarella cheese, you've got pizza.

(I used to crave it during my pregnancies, too.)

Oh you all gave me a great laugh too! It's the next morning here now.

Women always have a 'soft spot of understanding' for pregnancy cravings.

Whereas my husband had first said, "Can't you just fight it?" (Knight tatics? No, I'm sorry, NOT possible!)

Mary Theresa, I am only 2 weeks behind you, your little bubs must be a possible New Year's baby?

Ruth and Anne you crave pizza? Well I have a little theory about last nights little craving. I had pizza at lunch and I think that it offset some delicate, internal balance and custard tart was the resultant craving to 'balance' it all again...truly! I'm not joking!

Matilda here is a photo of a custard tart I'd say it is a Australia-wide favourite and was my absolute favourite sweets as a child. There was no time for sugar-free alternatives last night but here is a lovely little recipe that is sugar free AND still tastes nice!

ANNE'S CUSTARD TART (that's what I call it but not an orginal creation from me)
(gluten-free, wheat-free, sugar-free, guilt-free in other words!)

BASE

3 Egg Whites
1 1/2 cups of almond meal
1 Tbl Xylitol (if sugar free) or sugar

Preheat oven to 170c.
Beat egg whites until stiff. Fold in almond meal and xylitol and thoroughly mix. Grease the sides of a 25cm flan/quiche ceramic dish. Place baking paper on the base. Place mixture on the base and slowly and carefully massage the mixture out to the sides and up the sides. Place in the oven and cook for approx 15mins or until it starts to lightly brown on the side edges.

FILLING

3 Egg yolks (leftover from the whites) plus 2 whole eggs
1/4 cup of honey
Pinch of salt
2 cups of cream
1 tsp of cornflour
nutmeg

Adjust the oven temperature to 160c.

Beat the eggs and add the honey and salt & cornflour, then stir in cream. Strain the mixture into the pre-baked tart shell. Sprinkle nutmeg on top and place in the oven on the middle shelf. Bake for 30 minutes or until the custard sets. Serve hot or cold.

Enjoy!

One time my knight was able to track down chili during a 90 degree summer day!

I'm so happy his quest was successful

And mine tracked down fresh watermelon in January, where here it is winter!

What good husbands we must have. . .
