OK...I am way late, sorry about that!
And just to make you laugh, as I typed in “Superbowl Edition” I actually typed “Superbowel Edition” I do really live with a bunch of guys, don’t I?
So...
Monday--Some round steak cooked all day in the slow cooker with onions and diced tomatoes. I threw in the last hour our left over greens from the weekend, a bit of mashed potatoes left over to thicken it up....some corn...and another can of tomatoes.....over brown rice.
Tuesday-- ah, I changed my mind, I’m making chili in the slow cooker!
Wednesday--Ham and Green beans in slow cooker and maybe corn bread if I get my act together.
Thursday-Ham and Potato Soup in slow cooker
Friday--Tuna salad with baked fries
Saturday--Sausages, sauerkraut, and potatoes with side of green beans.
Sunday--Leftovers....pumpkin muffins for mid day...And Superbowl Food....I’m trying this recipe using roasted cauliflower and vegan nacho cheese I am the only one in my family that adores cauliflower...I really do...it is the best low carb replacement for potatoes, I make a mean chili with lots of veggies in it, including cauliflower, and everyone informed me that, indeed, my chili is good, but DROP THE CAULIFLOWER. Don’t they want SuperBowels????
So...I’m making these cauliflower bites in hopes of changing their minds about the very good for you veggie. I’m sure I’ll make something else, not sure yet.
Where is the “passed out after all of this work” emoticon??

I'm having some women friends over for an Italian meal on Saturday night and hopefully I'll be someone else's house for Super Bowl :) I tend to bring wings or a chicken wing dip - crowd pleasing!

Tonight was spaghetti with sauce in the crockpot, which will last through tomorrow at least. Chicken noodle soup has been requested, although I have my eye on this phở recipe, so maybe I'll try that instead. This week, we are very disorganized, after being knocked down with a stomach bug most of last week. Need to get our act together before the next round of bad weather - I'm thinking that phở will be perfect if we get snowed in (as appears likely) next week.

well last night was hamburgers in gravy with mashed potatoes and corn
tonight spaghetti and garlic bread and salad
tomorrow bean soup with cheese and tortillas

Sunday: machacas
Monday: beef barley soup (machacas for my 21yodd who forgot stuff for school, and really, really wanted machacas-she lives only 2 hours away, but had to leave before they were ready)
Tonight: Cream of broccoli soup (16 yodd is getting braces on today-we need a good meal for her).
