Hi Friends,

This week is a frugal week, we spend more on Thanksgiving than usual weeks, so this week is simple food.

Monday-Chili from the DASH cookbook. It involves putting a lot of veggies in with the typical chili seasonings and no pasta. I have started putting cauliflower cut up really small into the chili and it really makes a big difference...it extends the amount nicely without adding a bunch of carbs.

Tuesday-Roast with carrots, potatoes, celery and onion.

Wednesday-leftovers

Thursday-- Spaghetti

Friday--Tuna casserole, yet to be determined how I make this. I would like to make it with rice instead of noodles. Anyone have a nice way to do with that is also milk free?

Saturday--sloppy joes

Sunday--hummm....not sure yet.

How was everyone’s Thanksgiving recipes? Any great successes or duds? I would call the Vegan Pumpkin Pie a success, except I baked it on Thanksgiving morning...bad idea. This pie has a lot of different strong flavors that really needed to set for at least a day. It tasted really good on Friday! So...bake it ahead of time. I know that is true of a lot of spicy kind of pies, I should have remembered that!

I am going to try to follow a recipe for my stuffing next year. I always wing it and some years it is on and others...meh....it wasn’t bad, just not great.

Onward to planning for Christmas feasts!

Well now that's a good question. We've been gone over the holiday and I need to do a bit of shopping and meal planning and all that. Hopefully I'll get this figured out soon.

Most of our meals are for two nights so that I only have to cook every-other-night. That's helpful when we have a meeting in the evening or a late afternoon.

Today - turkey pot pie that my mom made us from her leftovers.

Tues and Wed - split pea soup (I have a leftover ham bone) and homemade bread from the bread machine

Thurs and Fri - spaghetti and meatballs/sausage

Saturday - baked beans and hotdogs (every Saturday)

OK, birthday girl and older daughter determined that tonight is "Bean soup".

and Tuesday will be burritos (scout night, it's easy and portable at need)

not sure about Wednesday

but we're going to try a new soup on Thursday - sour cream beef stew I think.

Monday- Three bean baked beans, corn bread
Tuesday- dal, rice, coleslaw (we often eat this on Tuesdays because child who hates it is out for dinner, and child who loves it is here!)
Wednesday- Potato, pea, cauliflower curry, basmati rice
Thursday- feast at church for St. Nicolas!
Friday- tofu loaf, mashed spuds, and peas
Saturday- lentil soup

OK some changes

monday - "bean soup" with toppings and tortillas
tuesday - bean burritos with sauted veggies
wednesday - beef stew with sour cream, salad and bread sticks
thursday - chicken gravy over rice with green beans
friday - pork roast with cranberry relish(or applesauce), mashed potatoes and gravy and corn
saturday - leftovers

On Saturday I finished my Advent written plan!! I did this a couple of years ago - for each day in Advent, I noted the feast day, books we are reading, teatime/baked treat, any special craft/activity and dinner. It made the season so much simpler and calmer - and now each year I just have to update for the Advent dates. So now I know we are eating all the way up to New Year!!

One thing that is strange - with college dd and travels for other family members - this is the first Advent we are not all together. And it is so strange. I have to figure out how much to cook etc - and the dynamics with missing family members.

But to get to the point....

Monday - immune busting chicken and rice soup with fresh sourdough
Tuesday - feast of Saint Francis Xavier. Indian food, Naan bread, chicken curry, basmati rice and raita.
Wednesday - black beans and quinoa
Thursday - apple chicken sausage with peppers and olives over rice pasta
Friday - Saint Nicholas! and one of ds's nameday. Black bean and sweet potato burritos

Oh my! Is it time to figure out dinner plans for the week, lol! I do know we are having left over chili tonight. I'm not planning on grocery shopping this week so we will make due with what we have. The problem is I don't know what's in the the freezer! Turkey, deer,and chicken I know is in there . . . . maybe. Canned and frozen veggies for side dishes. Maybe soup later this week as we might get some snow and soup and snow go good together. I'm sure I will get some ideas here!

Making 7 dozen cookies for an exchange tomorrow and that may be what's for dinner too!

That cracks me up! Snow and Soup do go together, says this lady who lives in the very cold northern tundra!! Of course us northern girls would look at the weather forecast and think soup!

Soup here, too, we are expecting a little snow tonight. I made potato-broccoli soup with plenty of garlic and onion. We have leftover cornbread from Thanksgiving going dry, so we crumbled that into the bowls first. Yum. I also made an apple crisp. Lots of potatoes and apples in the pantry. How many ways can we eat potatoes?!

Here is my updated menu for the week.

Tonight: baked chicken breast and veggies
Wednesday: sloppy joes (thanks to one of the above menu) with veggies (maybe tator toes if I make it to the store)
Thursday: soup that I don't know the name of but will have white beans, sausage, kale, and chicken broth with maybe a special bread
Friday: left over soup
Saturday: making dh cook so venison or turkey from the fall harvest with of course veggies again
Sunday: hoping to be invited to someone's house for dinner

I said I wasn't going to the grocery store this week, but I'm going tonight because it's going to be cold later this week (and maybe snow) and I would need to go shopping over the weekend and I would rather do it now before it's too cold.
