Any tips on long term storage of nuts like almonds and pecans? When my mil moved into an assisted care facility she gave dh almost 10 pounds of almonds and pecans. I don't really have room in my freezer for them but I don't want them to get stale or buggy. Any ideas? I've read that grains can be stored long term using oxygen pack thingies (?) but I don't know if that is possible for nuts and since we will be getting into them frequently for baking and snacking, if that is even feasible (not sure I spelled that right!).

I was going to say freezer, but you mentioned you don't have room...fridge? I keep nuts in either, but I also wrap them well, because they can still pick up odors, although we go through them fast. In looking around at what others do, apparantly air-tight glass jars would be the best alternative.

My problem is hiding them where no one can find them.

vacuum pack them in bags and then put in gamma sealed canisters?

cheap vacuum pack = ziploc bags, with the air squeezed out/sucked out of them, via a straw, or fill your bag while it's mostly submerged in water.

it's the oils in nuts that make the room temp storage so low.. they'll go rancid.. and hotter weather makes that happen faster. Just in the fridge will keep them much longer and of course freezer longer than that.

Interesting article Stef. I think if I had more time I would pursue that. There are probably a lot of things I could store in case of emergencies.
