Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

I recently got a new enameled cast iron dutch oven and I am excited to use it, but I have no experience with one.
Can you ladies kindly share with me your favorite dutch oven recipes and cooking techniques?

I love my enameled cast iron dutch oven, Theresa. You can do anything in it that you might normally do in a slow cooker. So think of things you'd normally make like pot roasts, stews, beef stroganoff, hearty soups, etc.

With the enameled dutch oven - you can do everything in one big pot - brown your meat, add your stock and other additions, turn down the heat, put the lid on, put it in the oven or leave it on the stovetop for a few hours - WALK AWAY!!!!

It browns garlic and onions beautifully! Like no other pot I have!

Don't use anything metal on the surface, or it will scratch it. And think of it as a cast iron pot even though the enamel is covering it. The enamel becomes stained and seasoned over the years - so the interior will never be factory-finished-bright-shiny clean again. We do hand wash in soap/water, but we use a plastic scraper on the bottom to get any stuck-on stuff off the bottom.

Happy cooking with it, Theresa! It is my hands-down favorite winter weather cooking pot!

Theresa, you can also bake breads and foccacia in enameled cast iron, which gives a really nice crust. I've used enameled cast iron for homemade mac and cheese and other casseroles as well ~ no other cookware provides such a lovely crispy brown edge which our family enjoys. Hope you enjoy using it!

I love my enameled dutch oven and use it at least once or twice a week! I second Jen's comment about using it just as you would a slow cooker. We also use ours for frying, it's less messy than a fry pan. But, my absolute favorite recipe (I have many that I love) is for cheesy bacon grits! Here's a link to the recipe:

Just an FYI...The Pioneer Woman has loads of great recipes that I use.
Blessings and Merry Christmas,
Pam

Oh, I would love to have one of these! It's on my list of someday (along with an electric roaster). The Cooks Country (Test Kitchen) folks use them all the time, so I bet they have lots of recipes on their website.

Okay, i came back to this topic because I knew that some bad girl had linked to the Pioneer Woman. Since I am a sickie stuck in bed but very hungry, I decided to torture myself by looking at recipes. I had never explored this glorious site before but now I am book marking everything.
Thanks Pam!
