Does anyone have recipe for something quiche or frittata without using dairy products. I can go crustless for the gluten-free part, but I'm at a loss for the egg dish without using milk/cream or cheese.

I've made frittatas without milk or cheese. Are you just looking for flavor combinations? Sausage is pretty flavorful on its own, and you could add some potato or bell peppers or maybe spinach? Fresh herbs might work nicely to add flavor without cheese, or maybe some diced ham and some blanched broccoli.

I don't really follow recipes since frittatas are often a means of using up leftovers, but I've followed Alton Brown's recipe as a guide for proportions, leaving out the Parmesan cheese.

and theres lots of gluten free baking mixes out there or the option of doing a nut type of crust.. so there are options for crust.

As far as the milk.. almond milk? what about soy cheese?

Erica, you could try using hash brown potatoes for the crust. We use potatoes all the time for quiche crust. Leaving out cheese is not a problem as long as you have other flavorful ingredients. Thank goodness we don't have to go dairy free, but I know there is a range of "other" milks out there: almond, rice, soy, coconut...
