Oh, Dearest Mother, Sweetest Virgin of Altagracia, our Patroness. You are our Advocate and to you we recommend our needs. You are our Teacher and like disciples we come to learn from the example of your holy life. You are our Mother, and like children, we come to offer you all of the love of our hearts. Receive, dearest Mother, our offerings and listen attentively to our supplications. Amen.

Those of you cooking the whole meal: which dishes are you making a day ahead, which are you getting from a local restaurant "take out" and which making thanksgiving day.

Me- take out - 2 pies gotten the day before. Day ahead to make: cranberry sauce, and am thinking boiling the sweet potatoes the day before.
The day of: turkey, corn casserole, dressing, green beans, gravy (oh - well I cheat and get it at the grocery store), and sweet potato casserole.

My parents are coming and I hate having people watch me while I cook (especially my mom) so I am trying to get as much done ahead of time. Even meals that day - I will put together in the morning before they come here.

Everything will be either cooked or prepped the day before. It makes Thanksgiving more relaxing for me. I don't like anyone to see a messy kitchen. Here's the menu I've been using for a couple of years now (minus a few items we won't make this year).

Night before:
Turkey -- in pan, seasoned, covered to prevent drying, but all I have to do is stick it in oven.
Potatoes will be peeled & cut night before, sitting in cold water in refrig..in the pot I will cook them in. Easy peasy...grab & set on stove!

Everything....Table will be set the night before. I found it's easier for me & I can clean up all the mess by prepping.

The only thing cooking will be cheddar buscuits (red lobster recipe!) to make sure they are piping hot & fresh, but again...prep will be done ahead of time. Unless we have late guests, then reheating of some dishes may be necessary, but no one ever notices.

My mil and sil both cook the turkey the night before and then warm it up the day of. It tastes fine, so you could do that ahead, too, if you wanted. Then the oven is free for casseroles.

It's just us this year, so I'm feeling very relaxed, but . . .

I'm sure I'll make cranberry relish the day before. Maybe the sweet potatoes and cornbread dressing? Not sure. My girls will do the table, but probably not till the day of. I'm investing in a turkey roaster this year, so that I can free up my oven for other things. The pie-making daughter and I will probably make our cherry and pumpkin pies the day before as well. I have choir practice Wednesday night, so I'd better be organized for that day!
