Okay, this seems like such a simple question but I'm really in a quandary when it comes to lunchtime each day. I've run some searches and can't seem to find the answer to my question on these boards.
I need some ideas for what too make for lunch.
I don't mind cooking lunch as long as it's quick.
Leftovers aren't an option right now since it either all goes at dinner, or there's just enough for dinner the next night.
We've tried cold cuts (which the kids like) but it got too pricey since we had to buy gf meats.
They'll eat yogurt when I make them do it.
I've got one that won't touch cheese with a ten foot pole and only one that will eat peanut butter!
I've gone the route of trying to make everyone eat what I made whether they like it or not but the grumbling and complaining was too disheartening. Sometimes I think I should have been firmer, but I've also got some really stubborn kids. :)
We've got a breakfast menu routine worked out where we know what's for breakfast each day of the week. It's become automatic. I'd love to have the same setup for lunch, but am just really stuck for what might work.
Any suggestions would be welcome.

I am working on packing lunches for the kids when
I pack dhs lunch in the evening. Then, everyone gets what they need, we just pull it out of the fridge and eat, no dishes, no questions, lunch is done I get my salad and grain free, dd can get her cheese and fruit and no allergens, ds will need his own fridge to store his lunchbox but hopefully, I can pack him enough, Still working on this idea and need to do it more than once a week. I think it does change how you grocery shop. I am excited that I might not have to think about lunch during the day.

Turtle,
I think this might need some brainstorming in order to work well in your family. What does work? Would it be better to pack individual lunches or for everyone to have the same thing? I don't know how old your kids are or even how many you have but here is what we do in our home:
1. Monday through Friday we have a set schedule every single week.
Mondays: Deli sandwiches w/ seasonal fruit
Tuesdays: Mac and cheese w/chicken nuggets: We do try to get organic for both but not all the time depending on the budget
Wednesdays: Apples, pb&j, cheese and crackers and other fruits
Thursdays: Leftovers
Fridays: tuna or pizza type stuff
2. The above is what I make for lunch, my oldest is not a mac and cheese fan but will eat more nuggets that day. We tweaked our lunch menu for a long time but can up with this that worked for us.
Anywho.....maybe a muffin tin lunch with veggies and dip would work better. Quesadillas with beans? String cheese with fruit and crackers?
We tend to have yogurt, string cheese and muffins for breakfast so those are out for us but may work for you all. Also how about hardboiled eggs or egg salad? Or maybe tuna salad or chicken salad? As you can tell we are a BIG sandwich family.

We are having the same problem here! I've been trying to change our diets to more whole foods, greatly reduced our processed foods, and greatly reduced our gluten/grain/sugar intake. Lunch right now is our biggest struggle. I've been increasing some of our dinner meals so that we have leftovers at least once a week for lunch. It takes a lot of planning to eat this way and I'm struggling. I'll be watching this post.

What are you looking for in lunches.. you mentioned gluten free lunch meat?
what if you got roast or chicken that you cook yourself and then slice up for sandwiches?
stir fry veggies and rice can be a fairly easy lunch
burritos.. we do a build your own style so that the bean hater doesn't get those and the cheese hater doesn't get that and of course you could have different tortillas for different needs.

Having the same problem here!
Lunch here: sandwiches, mac n cheese, scramble eggs, noodles, pre made pizza crusts (store bought) make own pizza. I bought a panini make a couple months ago- but the novelty seems to have worn off! I think I may have to revive it!

Something a little different that we eat is an apple sliced and dip it in peanut butter. We buy the natural stuff and I bet almond butter would work too. Serve with fresh veggies for a full meal.

We like tunacado sandwiches. I toast the bread because gf bread gets crumbly. Take a bowl and mix a can of tuna, an avocado, alfalfa sprouts, and carrot shreds. It will become a spread. I add Mrs Dash to it also. It is soo good! My kids would not try it so i told them i would give them a dollar if they tried it (terrible, i know), and they went for it...and loved it! You can also use it for a cracker like dip. We are gluten free also, so it can be challenging sometimmes. I second a lot of the ideas above.
