Ham with mashed potaoes and acorn squash stuffed with stove top stuffing and some veggies, probably green beans.

We cleaned out the freezer the other day and discovered two hams in it. So we've been thawing it in the fridge.

Don't be impressed, last night was bean burritos and the night before mac and cheese

Last night we had roast chicken (on of those Perdue ones that is already prepped - just throw it in the oven). I roasted a variety of leftover vegetables with it (red potatoes, broccoli, cauliflower, carrots).

Tonight we are using the leftover chicken with some mixed beans to make a Red Bean Chicken Curry Stew. I also made a loaf of whole wheat bread in the bread machine to go with it.

I stole your idea Jodie. Got a ham and its in the oven: mashed potatoes, carrots and mac n cheese to go with it. Don't be impressed - all the sides are the already made ones bought at the store - but the kids don't care .
Tomorrow - left over ham with other sides. . . cause tomorrow we leave the house quickly and early for dd drivers ed; so its left overs or nothing.

Monica - I MUST look up Red Bean chicken Curry Stew - unless you can send a link to one! I am always looking for something to do with left over chicken!

I use this soup mix. All I add is chicken, diced onion, a few cloves of garlic, and some spices.

I threw it all in the Crock Pot about 9:00 this morning and put a loaf of bread in the bread machine at noontime. Dinner's ready.

Since it is co-op day and we just got home and need to leave again soon to get our family portrait taken for the church directory, we are eating out at our favorite Mexican restaurant. So I'm taking the easy road tonight.

Leftovers. Love leftovers! "Fried" chicken and garlic green beans from Sunday (for the kids), Chinese takeout from Saturday (for my husband), and broccoli soup my mom brought over (for me).

We had a casserole of shredded rotisserie chicken (carcass in freezer to become chicken-and-dumplings at some point), mushrooms, julienned carrot, french-cut green beans, some grated Wisconsin cheese my cousins send every year, and brown rice. That, and I made some whole-wheat quick bread (2 c. flour, some wheat germ -- I didn't measure -- 1 T baking powder, a big glug of raw honey, 2 eggs, and cinnamon, clove, nutmeg, allspice, cardamom, and mace, more or less to taste). I had to run to the store, then home to throw dinner together, while my 8yo was at Irish dance, so that we could all eat before my 10yo had to go out to Cub Scouts.

We were doing the paleo thing for a while, but this week we have been doing the affordable thing, hence dinners like this. It was pretty good, I have to say.

Yes. It actually calls for 8 cups of chicken broth, and that's what I use.

It's enough to feed an army!! We're having it two nights since tomorrow is a busy afternoon for us and we won't be home until 5:00.

I made Italian wedding soup, using ground lamb for the meatballs and substituting cannellini for the pasta (to make it gluten-free). I've never made it before, so it was a bit of an experiment, but it was really good!

So far this week.. (its been a busy one with a dental appointment for all 4 big kids, and a baby checkup, but we are sticking to our budget!!)

M- Tater tot Hot Dish (Tater tots exchanged for homemade browned in skillet potatoes- this dish is cooked ground meat, frozen green beans, a mushroom/onion sauce, and potatoes on top. Cheese at the end :) )
T- corn/chicken quesadillas
W- chicken noodle soup.

We had a family favorite tonight, Taco casserole! So simple and easy too. Brown hamburger, afterwards add a couple spoonfulls of mayo, seasonings (of the taco variety) of your choice, jar of chunky salsa. Mix together and pour into casserole dish and top with crushed tortilla chips and cheese. Cook in the over until cheese is melted (around 350 degree give or take). We double the recipe tonight to have left overs for lunch this week. I don't measure, so I go by looks with the mayo, cheese, chips, and seasonings. I don't use a packet of taco seasoning, but stuff from the spice cabinet, either is fine. Any salsa you like works (one with corn and black beans is my favorite), but it must be chunky or you will have taco soup. We used a pint jar of homemade salsa from our garden this summer with 2 lbs of burger. Chicken or ground pork could be used instead of burger (since it is getting so high). I bet ground turkey would work too. We top with sour cream and taco sauce when we eat it, but what ever you heart desires. Can't wait for lunch tomorrow.
