We hit 100 degrees last week for the first time this season    .

What do you eat during your hot months, whenever they are?

I'm especially interested in food that includes one or more of these qualities:

tastes great!
high in protein
travels well
can be made ahead
whole food
shelf stable
easy and/or fast to prepare
uses seasonal produce
athlete friendly
unique spin on plain food

I'll start with our old standby, Seven Layer Taco Dip using this Taco Seasoning.

For example, a friend recently shared chunks of watermelon with crushed fresh ginger. Delish and so refreshing.

I have to admit that the seven layer dip was one of the first things to come to mind.. while it needs to be kept cold.. it is one of my main standbys for swim meets. Simple. Relatively healthy. Easy to travel with.

I also love serving yogurt with a quickbread/muffin for breakfast.

cheese and meats for topping crackers is a nice change from sandwiches.

Now this is a bit more of a process.. but I use my big electric roaster on the patio and cook my own pinto beans. By doing that I now have the basis not only for the dip listed above.. but for burritos, fajitas, tacos, tostadas, chili, etc.

Then I can easily boost an easy hotdog meal for instance by having a nice homemade chili with it.

And did you know you can heat up tortillas on the bbq grill? I LOVE bean burritos with sauted (or grilled!) fresh veggies like bell peppers and onions and zucchini and tomatoes and such.. top with a good salsa, some cheese and maybe some sourcream and...

Cook up a bunch of chicken.. I prefer a dry seasoning rub to a sauce or marinade.. and you not only have the meal for that night but you can use the leftovers for sliced chicken on salad or making chicken salad sandwiches or to use sliced with the cheese and crackers.

kabobs are great.. time consuming to put together but simple simple. I cut up some cheaper beef carefully to cut across the grain making it more tender.. a simple marinade like soy sauce and a bit of oil.. let it marinate while you cut up veggies.. mushrooms, zucchini, peppers, whatever you like.. then thread it all onto skewers.. you can make these ahead and then the grill time is pretty short since it's pieces not big chunks. grilled fruit is excellent this way too. I did some with apples and pears (tossed in a water/lemon mix.. I like adding a bit of sugar too to keep the lemon from being too sour on the fruit) and pineapple chunks. it was good.
