I'd love to start adding some beets to our salads (from fresh,whole beets, not from a can), but I am clueless on how to prepare them.
Any tips?

You can grate them raw. I have baked them wrapped in foil in the oven (they really can vary in size, so maybe about 30-45 mins at 350). Then you can peel them and cut them into small strips julienne style. You can boil them until soft when pier ed with a fork or knife and then cut them up, too. I'm remembering a delicious recipe with julienned beets, chive dressing, salad greens, and blue cheese. I'll see if I can find that for you....I think I know what cookbook it's in ...I'll look tomorrow. It could be a nice Easter salad because it features spring produce.
Beets are delicious, but I have to say, they are messy and stain everything, so be careful not to get the juices on your clothes or laminated countertops.

I have always just scrubbed them, slicd off the root and stem ends, wrapped them in foil and baked them in the oven. The peels slip right off after they cool a bit and then they can be stored whole in the fridge until you are ready to use them.
