Is anyone dairy-free and gluten-free? I have one here and I'd love to make a dinner we can all eat, all pieces of it. We love Mexican and everyone misses the enchiladas. I see recipes online, but I don't know if it is really good and these special ingredients are almost just too costly to experiment with. Any suggestions on how to still do Mexican in particular? And even some nice Italian mozzarella type dishes?

is it all dairy or just cow dairy? I know some people can have dairy if it's from goats. You might also look up mexican dishes that don't use cheese.. or ones that allow more individual toppings like burritos or fajitas. A guacamole (mashed avacado, a sprinkle of lemon or lime juice, garlic pwd and salt) is a great creamy topping that might help "make up" for the lack of dairy.

If you can do corn, then tacos, taco salad, and nachos can still be tasty without cheese. I've also used the cream from coconut milk to replace sour cream as a topping, and it is pretty tasty and helps recreate the texture.
SusanJ recommended Well Fed on her blog, and I got it. SallyT has also mentioned it here on the boards, and MichelleQ recently reviewed it on her blog as well.
Boy I like this cookbook. I really have found it inspiring as we're gluten free and I'm dairy free. I know you specifically asked for replacements for Italian and Mexican, and she has recipes that would help you use those flavors even though they may not be the same medium, but what I really like about the book was that it wasn't trying to recreate conventional dishes using complicated substitutions. Rather, the recipes are just really good recipes on their own. No disappointment that a dish isn't quite as tasty as regular pizza or spaghetti or whatever because it is not trying to be those things.

oh also the soy dairy alternatives (cheese and such) won't be so expensive for items like tacos and things since only those that must avoid the dairy can use them and others use the regular dairy cheese.
