We meet weekly with a few couples for rosary + dinner.
We do a simple meal of soup/stew, bread, salad and dessert.
Now one of the men found out he must have an extremely limited salt intake.
It's my turn to bring the main dish, so I'm looking for some recipes for simple soups or stews, chilis, etc. We are all trying to accommodate his needs so that his wife doesn't have to bring a separate meal for him. And really, this change is helpful for all of us.
So, anything with canned tomato products, canned beans, even cheese is out (although it can be a separate topping). I've not had a lot of success with cooking my own beans because of the altitude, but I'm open to suggestions. In my own family I use canned beans and rinse them, but even that is too much salt for this friend. I already use unsalted broths - whether purchased or homemade.
I also need a recipe that's reasonably easy for me to prepare as well.
Am I asking too much?? Gosh, I hope not.

What altitude are you talking? have you tried cooking beans in a pressure cooker maybe? or soaking well beforehand? we're over 4000ft and I don't soak beans (oh wow.. and I need to go and start them for dinner tonight) just use lots of water and cook for about 6 hours. (about 6 cups of water to a pound of beans)
There are canned tomato products with no salt.
I don't use many recipes myself when making soups just toss things together.
Oh I know.. one I've done is a basic beef stew without tomatoes.. beef broth base, carrots, potatoes, green beans.. without tomatoes seems to work better here as far as what people like to eat.

Jodie, I did not know about the canned tomatoes with no salt. I may look into those….
I don't have a pressure cooker. We are above 6000 feet. I tried to make beans once and it was a disaster. Since then, I've gone to canned. They just would.not.soften.

ok yeah, looking it up at your elevation you'd probably need a pressure cooker to cook dried beans successfully.
I'd keep an eye out on free-cycle places or garage sales and the like and see if you couldn't pick one up cheap and try it out.
Sorry I'm not much help with the recipes. I just don't use any real often. Oh.. if you use a seasoning mix that has salt in it. You might be able to look up a recipe to make the mix and just leave the salt out. I love herbalcom.com for buying bulk herbs and spices.
